The sourdough crumpets from "Full Moon Feast" are wonderful. They are simple, easy & yummy. I will definetely make them again.

I keep reading good things about that book. I REALLY want it. :thumb I hope to get it after dh's next paycheck... too many bills this month!

ingredients:
1 cup sourdough starter
1/4 whole milk or half-and-half
1/4 teaspoon salt
1/8 teaspoon baking soda
1 tablespoon lard, ghee, butter, or coconut oil
butter for serving

equipment:
6 cookie cutter rings (or something similar, like jar lids)
oven proof skillet

preheat oven to 350F

mix together sourdough, milk, salt, and baking soda

heat your ovenproof skillet over medium heat, grease it with the fat, place the rings on the skillet, and pour batter into each ring. turn the heat to low

the batter should become full of holes. cook for 1-2 minutes and then transfer to the oven to finish (should only be a few more minutes, watch them)

toast the crumpets under a broiler and serve with butter, honey, jam, cream cheese, or any other toppings you like

Thanks, Kallyn. I had spotty access to MDC yesterday. I should also add that if you remember to turn off the oven, but forget to take the last batch out while you are madly rushing to get yourself & your 2.5 yo dd ready for the day, you will find very yummy, crunchy crackers in the oven when you decide to use it later that day. :lol

Be sure to grease your rounds well, or the batter will stick.
