Help! I finally got my kraut to turn out! Nice, tangy, YUM! :lol I plan to store it in a jar in the frig. My problem? Basically I had to dump the brine to remove the weight (which settled and was no longer within reach to lift out) to get to my kraut. If I store it without brine in the frig, will it be OK? Or should I make some brine to put in the jar with it?

Side note: Every time I ferment something, I learn another lesson. The lesson this time is to plan ahead for settling and make sure my jar is very full of veggies!

I like storing my veggies with the brine. I don't know if it is really necessary, but I like storing it in the brine because I think it helps to age the veggies(in cold storage) even more and develop good flavor, hopefully someone with more fermenting experience will reply:p .

I dont know if this ruins the enzymes... I hope it doesnt. I store my kraut in small freezer bags, and freeze them. I put them in batches that I will use in three day periods. I make 5 or more punds of kraut at a time though , and dont have a good way to store it.... or room in the fridge.
