OMG, yesssss...some potato soup sounds SO good right now! I am going to send DH out for some! (And a strawberry McD's shake...THANKS CARRIE! :lol )

Its super easy, but I must tell you I don't use recipes when I cook :shy I cook by more of a formula than recipes.
Ingredients:
extra virgin olive oil
yellow onion, garlic, carrots
red or white potatoes
chicken stock (or veggie stock if you prefer)
finely chopped fresh greens (kale, spinach or chard)
seasalt, pepper, nutmeg, hot sauce (optional)
optional add-in ideas: corn, sausage, white beans or a little heavy cream, etc.
Last night we sauteed w/ a couple tbsp olive oil: 1 whole onion chopped into 1" chunks, 4 small cloves garlic, 2 carrots cut into 1" chunks. Then we had red potatoes cut into 1" chunks (probably about 10 medium- filled our soup pot up halfway).
Then I added chicken broth to cover (I used leftover homemade but you can use good quality boxed kind). I ended up using probably about 2 QTs of broth and the veggies were covered by about an inch.
Cook until tender and then puree either w/ immersion blender or ladle into blender in batches (pour pureed soup into a bowl while blending the next batch- I usually have 2 batches for my big soup pot). Pour back into soup pot and add 1 big bunch of finely chopped greens (kale, chard, spinach, whatever you like). You can now add in whatever extras you want! Season to taste with seasalt, ground pepper, pinch of nutmeg and hot sauce if you like it.
Really the "recipe" is quite forgiving so you can add more or less of the veggies I mentioned. You can leave some of the soup chunky if you like it that way- my family likes it creamy. It turns out amazing every time and its a great healthy comfort food.
I hope this isn't too confusing! I am really bad at typing out my recipes. My friends have repeatedly asked me to write them down for them and I never do just because of that. LMK if you have questions!
ETA: I just finished eating a big bowl for lunch w/ some chicken sausage and extra greens added in! So good! :yum

Oh, thank you! This sounds soooo good. Starting last night, I'm really into the soup thing.
Unfortunately, the one that occurred to me as sounding REALLY good is french onion soup. Celestialdreamer, you'll understand why that just isn't an option. ;-) Ah, well. Maybe if my milk disappears during pregnancy, I can cheat now and then (since gluten and dairy are my son's allergies, not mine). French onion soup just isn't the same without the cheese toast on top.
