I thought it would be cool and somewhat inspiring to read what other mamas in here are eating. I noticed a lot of veg mamas, so I was thinking I might get some ideas reading what everyone else is eating.
We could list snacks or meals or whatever.
I am making dinner right now. We're having long grain brown rice, cannellini beans w/ lots of garlic, something green (broccoli? spinach?) and maybe some sliced tomatoes.
Anyone else?

I start my day with a big bowl of oatmeal, 2 pieces of toast with lots of butter, one with jelly (no sugar) and the other with a nut butter, a big glass of raw milk and a serving of fruit. I've eaten this meal for breakfast every single day for the last two years. :D
For lunch I make sure I get at least 2 servings of veggies and one fruit. Whole wheat pastas with sauce and meat, casseroles (I have a wonderful mac & cheese made with dried mustard, yogurt and a touch of cayenne, mmmm!!!), bread puddings, etc.
Dinner we eat common meal (I live in cohousing) so I just eat whatever is served. :)

Lots and Lots of Avacado! I'm eating them in ww tortillas with cheese and sour cream, or just plain, whatever. I love them!
Scrambeled eggs, carrots, cheese cubes, salsa, I crave meat but don't generally eat or cook with it so I'm not really having much. Seafood - lots of seafood. Whole grain rice. I'm starving all the time!

omg i love avocados, sliced up on a toasted tortilla with mexican seasoning (well, that's what it says on the bottle, it's dehydrated "stuff!")
and i could totes go for some grapes, too. grapes and cheese and wine.

I tend to eat leftovers for lunch from the night before (usually pasta or someting both a veg -me and a nonveg - dh can eat).
Breakfast lastely has been homemade banana bread but sometimes english muffins with veggie sausage like a sandwich. I eat a lot of veggie burgers, tempeh, pasta, burrito type things for lunch if not leftovers. I like cooking in bulk. LOL. I make bean veggie bean soups and chilis (yikes) and sometimes I'll just have some veggies and nuts for lunch. I've been really trying, the last year, to only eat when I'm hungry. And to only eat until I'm full... if I don't want a full meal, I won't eat one. I like to graze now. :-)

I'm afraid to eat seafood because of all the heavy metals. :( I just stick with the fish oil supplement.
I just ate a half a pint of gelato... :lol

Last night I made some pumpkin granola bars (recipe from mothering.com) and we had those for breakfast this morning. They really hit the spot. Dinner tonight was a baked turkey breast, yams, and cranberry sauce. yum. I am constantly starving to death and mostly craving meat. I need to go to whole foods and stock up on stuff that I can just grab (and lots of organic ground turkey lol).

I love to cook but lately, whoa! I want MEALS! I roasted a chicken the other night, mashed sweet potatoes and peas. Today I made homemade chicken soup with tons of veggies....really hit the spot on this cold night! I'm going to go make some pumpkin bread from the pumpkins I froze last week. OH! I want to bake and bake and bake!!
Will probably be making a ziti tomorrow....that should call for some yummy homemade garlic bread!!
Off to preheat the oven.......:lol

mmm...food...i love to eat! we had pizza tonight cause we got home late and we were too hungry to deal with cooking. the night before i made a west african style dinner w/swt potatoes, corn, tomatoes, white beans, onions and garlic, and then seasoned it with ginger, cayenne pepper, and chili powder, all served over brown rice. :yum i've been on an orange veggie kick i guess cause before that i made baked squashes stuffed with veggie sausage, granny smith apples, and nuts, topped with just a drizzle of maple syrup. i loooove cooking!

I had a few days of total ravenousness. I though I was pms :lol .
But now I'm not too hungry, and I'm not craving anything bad, mostly fruit in fact. I've been steaming and freezing lots of pumpkin leftover from Halloween, so lots of thing with pumpkin in them too.
Yesterday--
breakfast: pumkpin black bean kale soup; a banana; 1/2 a soy yogurt.
snack: an orange; handful of peanuts; tea.
lunch: Italian pasta salad (yk-ww pasta, olives, chickpeas, tomatoes, broccoli, onion); another bowl of soup.
snack:some grapes; roasted pumpkin seeds.
dinner: edamame; sesame spinach; sushi (vegetarian); green tea.
snack: 1/2 an orange.

The last 2 mornings I have woke up feeling slightly nausous, so I ran into the kitchen for my organic pumpkin omega 3 granola! It is to die for! YUM! Then dh makes me breakfast, our own eggs, toast, once in a while a few pieces of bacon with no nitrates. Lunch is tricky. . ..and never very wonderful. Dinner we eat a lot of meat - our own lamb or chicken, usually squash or potato from the garden, we just got some wonderful spinach from a local farm and have been having spinach, craisen, walnut, flax seed, feta cheese and balsamic vinigrette dressing - delish!! I quit drinking coffe and don't drink soda anyway, and have been staying as far away from sugary sweet processed things as possible.

I have been craving Thanksgiving fare, and couldn't wait for Thanksgiving. Last night we made a Tofurky roast, mashed potatoes with shitake gravy, and steamed green beans. We had a Whole Foods pumpkin pie with real whip cream sweetened with maple syrup. It was so satisfying that I am warming the leftovers up for breakfast.
For breakfast I usually have a thick (so I can eat it with a spoon) smoothie 3-4 times a week made with cashews, walnuts, frozen mangoes, frozen berries, flax or chia seeds, and soy milk (I make it in the food processor, so I can get the right thickness).
I eat oatmeal a couple mornings a week. I mix in cashew butter and maple syrup or agave nectar and top with sliced bananas and soy milk creamer. It is so yummy to me.
I make savory veggie pancakes about once a week. They have grated carrots and zucchini, and they are a big hit with my dp and ds.
Lunch and dinner vary a lot, but I strive to eat a big salad or a big serving of greens everyday.

snack: handful of wasabi peas; an orange; roasted pumpkin seeds.
lunch: soba noodles with broccoli.

Im craving any kind of protein and carbs lol. Mainly this one fast food place that is called In and Out Burger OMG!!!! I can eat that for lunch and dinner and snack lol!! Ive also polished off my dd's Halloween candy lol...I know its bad but Im still drinking my cup of coffee each morning and watching the sun come up :o

Wow. I know the hungries will hit at some point, but even now everything sounds so delicious!!
Smoothies made with frozen banana chunks are the perfect consistency. You can add protein powder, but I prefer milk or yogurt. This is a great chance to throw in some cod liver oil (pregnant women NEED that Vit A and D!) and ground flax seed, and you'll never taste it.
Ahimsa, post the recipe for those veggie pancakes!! I want to try them.
Linzie, I eat my oatmeal with bananas, raspberries or a spoonful of fortified raw honey (w/bee pollen). Mmm! Just sweet enough. I also pour some cream or milk or melt some butter on top.

I'm struggling with food :(. I'm having severe nausea despite trying everything to help it :(. I was trying to go on an alkaline diet but I'm going to have to worry about just eating before I do that. I have found one thing I can stomach: brown rice mixed with beans (black or pink so far) tossed in lemon juice and olive oil.

I had molasses, almond, raisin granola for breakfast and some clementines.
I am making beef stew for dinner. I started cooking it a 5:30am this morning. Ingredients:
Stew beef , onions, garlic, 3 kinds of mushrooms, celery, carrots, zucchini, yellow pepper, 3 hot peppers, can of whole tomatoes, sherry. I will make ww egg noodles with it.

Please share your mac and cheese recipe! :)Let me see if I can remember -- I'll do an edit for accuracy when I get home from work.
1/2 c butter? (maybe less)
1/4 c flour
spices (I use 1-2 tbsp dried mustard, 1 tbsp garlic powder, some white pepper and salt, 1-2 tsp cayenne -- if you don't like it too spicy, try paprika instead)
1 32 oz container yogurt
3 cups cheddar cheese, grated
3 cups Monteray Jack or other cheese, grated (for elasticity)
Boil a pound of whole wheat noodles -- I use spirals or whatever's on hand. Leave them somewhat al dente so they don't get mushy when you bake them.
Over low heat in a biggish sauce pan, melt the butter and mix in flour to make the roux. Stir and stir until smooth. Add spices. Add the cheddar cheese a handful at a time and stir. Add yogurt last & stir up.
Layer into a baking pan: noodles, sauce, grated MJ cheese. Noodles, sauce, grated MJ cheese. If you like the crusties on top, save some cheddar and throw it over the noodles. Pop in the oven and bake for about 45 min to an hour. Makes plenty (4-8 people? I'm terrible at quantity). Freezes well!
Oh, some people like to add a secondary protein source. I've used ham, sliced veggie dogs, tempeh and tuna fish. If you use the tuna, add an additional cup of yogurt or some milk or it will be too dry.

Actually, it's just on the stove top cooking slow--- but I do use my slow cooker a lot. I used it 2 days ago to make a pasta sauce with italian sausage.

I can't seem to eat enough of all the right things (and I don't eat the "wrong" things either).
I've been keeping a food and exercise journal and now I'm tracking the number of servings for whole grains, calcium, protein, etc. And it seems like I just can't eat enough to meet all the suggest daily amounts. So,I'm going for weekly totals at this point.
Also, I've been really craving dried beans and have a huge set that I soaked over night, crazy thing is that I have NO CLUE how to cook them or what to make them into -- plain beans doesn't sound exciting, but there is something about them that my body wants cause I just bought 5 more pounds at the store.
Any suggestions for white and red beans (it's all I had at the time)? Maybe something bean salad like?

I LOVE In-n-Out normally, but right now it sounds icky to me, LOL. I have meat issues when I'm pg, though. And egg issues. I basically go semi-vegetarian in the first trimester!

The Halloween candy was calling my name until the hunger and other symptoms kicked in a few days ago. I'm not even interested in the chocolate. Now I'm craving healthy, which I do appreciate! I only wish it lasted.:lol After the MS is over I want food, delicious, bad food and lots of it! Then bring on the weight gain. With my 1st I could eat cementines or tangerines by the bag.
My breakfasts have been simple. Whole grain bagel or oatmeal. Lunch is usually leftovers. I've been craving spicy and dumping jalapenos on everything, even eggs. That'll come back to bite me when the heartburn kicks in! We had chicken enchiladas w/ wheat tortillas last night.
Now I gotta figure out what I will make tonight! I'm thinking soup. We're getting a good chill down here now!

Wow you mamas are inspiring - I love to cook too but I get totally overwhelmed by all the choices out there when trying to cook healthy stuff for me and the family....
Lately I have been obsessed with eating frittatas - basically sauteed mushrooms, onions, garlic and spinach in coconut oil and/or butter with some eggs and cream added once they're cooked - pop it in the oven till its puffy and yummy!!!!
xixstar: If you soak your beans overnight and cook them (just don't add salt or tomatoes till after theyre soft) you can freeze small portions to use later. I like to saute some onion and garlic then add in some salsa (about a cup or so) and red beans and serve it over brown rice for a meal in a pinch - then if you want you can top it with plain yogurt, cheese, avocados, etc...You can also take white beans and make bean dip for veggies, toasted pita, etc. by throwing the beans, garlic, lemon juice, sea salt, and tahini in a food processor (I use a magic bullet).'
2Bugs & Lorette: I am soooo jealous!!!! The clementines at costco are sooo good and every time I go they are out!!!! Aaaarrggg!

Loooove my Magic Bullet! I have my old standby big Cuisinart mixer that I still use for hummus, veggies burgers, pesto, dough...but between smoothies, applesauce, soups, baby food, etc. the MB gets used at least daily! I actually own two :o .

My knockout oatmeal recipe for milk production:
Cook steel-cut or traditional rolled oats in water according to package directions. Add fresh or frozen fruit and sweeten with blackstrap molasses. Top with toasted slivered almonds.
(I always did mine in the microwave and even steel-cut oats don't take long!)

I originally got this recipe from an old Family Fun magazine that I was looking through at the dentist's office. I changed it a bit by using whole wheat flour instead of white and I use soymilk instead of milk. You may need to double or triple the recipe. This recipe is barely enough for three of us.
1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg
1/4 cup milk or soymilk
1 cup grated carrots
1 cup grated zucchini
2 green onions, sliced
Stir together dry ingredients. Mix together egg and milk/soymilk, then add carrots, zucchini, and onions. Combine wet ingredients with dry. Fry up in skillet, using a little oil. Serve with salsa, sour cream, cottage cheese, etc.

Aha! I've never wanted sweets, but this time I'm craving fruit! And with all 3 boys I enjoyed hearty sandwiches. I hope it's pink booties for me (or purple, I'm not a pink fan actually :lol ) and blue for you!!!

I have been eating a mix of good and bad...McDonald's (just once!) and this morning 8 sausage links and 2 toaster strudels... but I also eat tons of pomegranates and clementines and grapefruits and avocado's, and try to cook healthy meals. I have this serious issue with having to eat out for lunch though...

Yum! Can someone come to my house and cook? I work(3 days a week) and DH is a SAHD. He does a good job cooking most of the time but I'm going to have to come up with a grocery list after reading this thread!
We recently bought that Deceptively Delicious cookbook. You know, with recipes that work vegetable purees into kid friendly food. He's been trying a lot of those lately. Not bad.

ok, here's the sweet potato dish i made the other night. it's from Betty Crocker's Veg Cooking
West African Sweet Potato Supper
1tbsp olive oil
1 med onion, sliced and separated into rings
1/4c. creamy peanut butter
1tsp chili powder
1/2tsp ground dried ginger
1/2tsp salt
1/4tsp cayenne pepper
3 lg sweet potatoes, peeled and cut into 1/2in cubes (about 4c.)
2 cans (14.5oz ea) diced tomatoes with roasted garlic, undrained (if you can't find ones with garlic, just get plain and add a couple cloves of crushed garlic)
1 can (15oz) great northern beans, undrained
1 can (15oz) corn, drained (you can also use 1 1/2c. fresh or frozen corn)
1.heat oil in 4qt dutch oven over med-high head. cook onion in oil, stirring frequently, until tender.
2. stir in remaining ingredients. heat to boiling; reduce heat to med-low. cover and cook about 20-25min, stirring occasionally, until potatoes are tender. serve over couscous or rice.

dinner- waiting on the butternut squash soup (home made) man my house smells wonderful right now! I can't wait till its done, I keep going in to the kitchen to take big whiffs :lol
a few crackers as snacks and an apple with peanut butter. I don't think I am eating enough but I have zero appetite right now, so I'm forcing myself to eat in between the waves of nausea :o

I stopped at the store tonight and picked up some yummy snacks to have on hand. You guys are great inspirations! Got some yummy nuts, WW bagels, and real ginger cookies (for when that m/s does show up!!)

i am not feeling so hot today, but the kids were starving so we had eggs, tempeh-facon and cheese rolled up in some warm ww flatbread. it was really good.
i also got a box of clementines thanks to this thread. i can't stop eating those little dudes. it's like candy !

Was in the store today and HAD TO BUY those clementines everyone is talking about!! Yum! :yum Had 3 before dinner and DD has 2! I'll probably be back to the store sooner than I want to be!!
For dinner we had fresh picked brussel sprouts, homegrown butternut squash, a corn casserole and parmesan crusted wild haddock.
I'm doing it up while I still can....afraid of what's to come!

I haven't had any food cravings yet, just some aversions to smells. Have been eating a lot of hard boiled eggs. I grind my own flour for bread so have been eating cinnamon toast with homemade apple butter--lots of good B vites. Although, all of this avocado talk has made me have a hankerin' for some avocados! The thought of most fruit and veggies makes my tummy flip flop though.
Linzie2--I like dried cranberries and sliced almonds on my oatmeal--and I prefer scottish oats to rolled oats. But, I do like a little pour of good maple syrup too!

So I browsed through this thread and my only thoughts were "don't ya'll ever EAT?!" :lol
I keep by my bed in a cooler bag what I call a quickie protein shake with oatflour, protein powder, spices and a liquid (usually water cuz i forget the ice pack too often, ha ha!) This is how I like it, but i know others who do it with more fruits and what not. I drink this whenever I wake up enough to know i'm awake, usually just a quick sip or to. ( I have one of those shaker cups witha whipping ball in it). I also keep some Nairn's oatcakes by the bed in an oatcake holder and will munch on those if I am out of the shake.
Then for breakfast I make scrambeled eggs with basil and black pepper and cook up some wedge potatos with skins on and munch on a carrot or two. or sometimes avacado. yum.
Snack: usually curry lentil soup with brown rice or homemade salsa with feta cheese and corn ships
Lunch: (well sometimes I'll eat the lunch for breakfast and eat breakfast for lunch,dependso n my mood tee hee) Last week it was beef stew with potatos and lots of root veggies, yum! This week it's curried chicken with broccoli done in the slow cooker /crockpot and brown rice
Snack: more of the above snack, or sometimes another protein shake if we are out and about as that can be easier to carry around
Dinner: whatever we have left over... this week it's the curried chicken with brown rice and broccoli, last week it was homemade pizza with gluten free crust.
Snack: curried lentil soup with brown rice
and right before bed I will drink a bit more of protein shake to help me make it through the night.

I don't own a crockpot, I'm a rice cooker gal. The Scottish oats are easy enough to make, they just take more time on the stove, vs. 1 minute in the microwave from a tub of quick oats.
I barely have time to eat, much less cook, for myself with 3 boys demanding a huge breakfast.

I just got my first crock pot last month. I had to smuggle it in from the UK as they aren't sold here in Sweden. I'm enjoying it so far. I also love my rice cooker.
Now all I need is a Philip K Dick kitchen that does the shopping, preparing, cooking and cleaning all by itself. I just tell it what I want... *dreams on*

Oh, I've never put soy sauce on them, that sounds good! And I always feel bad about the no veggies too, the broccoli and cauliflower additions are my favorite. I'm not veggie but those little packets have always scared me, my mom and sister get horrible migraines with msg so I usually try to avoid it.
Now you've got me thinking of new ramen stuff. What about sesame oil and peanut (or just soy) butter? :yum

I do a Thai peanut sauce over boiled somen noodles--just slightly healthier than ramen, :lol .
Cold soba noodles are the bestest though!
But for some reason the warm salty ramen noodles hit the spot while pregnant. :o

:lol I've eaten quite a few of those in the last few days, only after I smother with cream cheese, I smother with garlic. Don't ask! Never even occured to me before and I know my breath is terrible!
I have had such a craving for ramen too! I like to put on a spicy oriental sauce with stir fry veggies. The veggies always make me feel better about it.:lol
(Just called DH at the store to add to the list of "stuff" I'm craving) He must hate this phase. Every night is a new craving and only that sounds good. It eases off by the 2nd tri.

Ugh, first signs of nausea tonight. I never have nausea so it's hitting me hard. :( It's not actually bad at all, I'm just a major wuss. :lol
I had my usual awesome breakfast (oatmeal, 2 pc toast w/jam & nut butter, glass o'milk, fruit), but then I skipped my lunch entirely. :( I'm so bad at working through lunch. Then at our staff meeting I mowed on chocolate snacks and rainbow Goldfish. Ugh! And for dinner, spaghetti w/homemade sauce, salad, whole wheat bread. Not bad.
Tomorrow I'll do better on lunch.

yesterday i could not stop eating! i'm way hungrier than i remember being with dd!!! (my mom keeps saying "maybe it's twins" NOOO!) i ate everthing i could get my hands on. i was especially into raw onions. i usually like them on a veggie burger, but yesterday i had to have huge hunks of it on my veggie burger. (when we eat at MIL's that usually what they have for me. they're pretty meat-and-potatoes.) on our way home i told dh i was starving, and he said, "but you never stopped eating!" we both started cracking up! i told him i'd rather be starving than feeling sick! i think he finds it funny because i'm pretty petite, so to see me puttin' it down like a linebacker is pretty funny. i wish thanksgiving was today. i'm soooo hungry!

I also seem to be hooked on the ramen this time around. I hardly ever eat it non-pregnant but I'm finding myself craving it so much lately.
Good ideas for adding veggies, and other good stuff. I used to add baby bok choy when I was in university and ate a lot of ramen ... it made me feel a little less guilty. I also used to add sesame oil and rice vinegar instead of the seasoning packet. Yum yum! Can't wait for lunch!!

I found recently at Whole Foods some plain ramen type noodles. They are better than the packets, because they don't have hydrogenated oils.
I have been eating A LOT more than I am used to. Probably double.
So far today I have had toasted challah bread with homemade strawberry jam and butter, spinach salad with onions, bacon, grilled chicken and balsalmic vinegarette, and a whole lot of french bread and dipping oils. Oh and LOTS and LOTS of water. I can't believe how thirsty I am.

I felt so sick yesterday morning/afternoon. I was not hungry but I knew eating something would help me feel better. I had a Popeye's fried chicken sandwich (and I never eat fast food). It made me feel totally better. Actually made the nausea go away!
pg stomach is so weird.
Now I'm making spinach lasagna and I am vacillating between wanting some real bad, to feeling sickened at the thought of it!

i've been having lots of cravings for things that typically i love. the other night i felt like i would cry if i didn't get indian food - so i ordered takeout. however, it just didn't taste the same. also, chips and salsa are my favorite snack, and, again, it just tastes different. i seem to be finding this with onion/garlic heavy foods. i don't know.

Publix, you must be in the south too? I haven't ever seen them anywhere else. Haven't ever had one of the subs.
I'm loving anything spicy! The salsa sounds so good and the thought of buffalo chicken strips and ranch is driving me crazy!
With DD1 I would eat a bag of tangerines at once. Dunno if that's good, but it tasted good.:lol DD2 was a fresh pineapple or half watermelon at once.

That's funny, right before I went to bed last night, I gobbled down 3 clementines. My husband wanted to take some to work, he thought we had too many and we almost got in a fight over them! I told him I "needed" the whole crate...You know you're pregnant when you start hoarding food....

ha ha! That's me right now too. When there's only a few things you can actually stand to eat and you're way too tired to make trips to the store to get more, you get a little territorial.
I'm eating mandarin oranges like crazy (do you guys call them that down there?) and my guilty pleasure is Ritz crackers. Mmm...salty.

a smoothie with vanilla soy protein, banana, and berries
Clementines,
Miso soup,
veggie buffalo wings over green salad,
leftover chicken caesar salad (just a snack size from last nights dinner),
a low carb tortilla with cheese and salsa.
MORE CLEMENTINES.
That's just today so far :lol and i'm ravenously awaiting dinner.....
dinner=making garlicky white beans, rice, broccoli, and sliced tomatoes (I stole that from the first post on this thread. mmmm, dh will be all where's the beef?)

This kid likes 4 things: PB&J, bananas, eggs, and caesar salad. :dizzy:
I'm getting really sick of those 4 things. :lol Plus, I think he scratched caesar salad off the list today, so...hopefully the food aversions stop soon.

CURRY!I could put it on anything!I'm itching for our next grocery budget to come in so I can buy this curry block at the store-it makes THE BEST CURRY STEW ever!!!!I just add steak chunks and anything else I please.It is SO good,I put it in a sandwich too.I will SO be hoarding that!

so this has been my week of getting back on track foodwise and away from so much starchy, carby stuff that i think is zapping my energy. i think i've done well and am making a real effort to get several servings of raw fruits and veggies everyday.
also, i've had a terrible sweet tooth since becoming pg. so this week in an attempt to both satisfy my craving and combat my terrible constipation, i've been eating a bowl of high fiber cereal with fruit & soymilk in the evening about an hour after dinner. this seems to get my sweet craving taken care of and the crunch factor helps too.
