On a gluten free diet wheat, spelt, rye, barley, oats, and I'm sure there's more, are all off limits. p1gg1e 01-21-2008, 09:48 AM Anything w/ wheat is NOT gluten free. On a gluten free diet wheat, spelt, rye, barley, oats, and I'm sure there's more, are all off limits. I understand that but the culturing of the sour dough is supposed to breakdown the gluten that Ive read it on the celiacs.com site...just wonder if anyone has more info. thepeach80 01-21-2008, 10:38 AM http://www.celiac.com/articles/752/1/Study-Finds-Wheat-based-Sourdough-Bread-Started-with-Selected-Lactobacilli-is-Tolerated-by-Celiac-Disease-Patients/Page1.html I found that. I'm not sure you could find a recipe for it, but you might be able to create something. Depending on your (general your) reactions to gluten, I wouldn't want to risk it though. |
