i've read here about weight loss and the like, and i find it very interesting. my problem is opposite, though -- i need to gain a little weight (like 10 pounds, maybe). i'm a little worried that my weight will slide when i have so few carbohydrates.

it's probably related that, whereas on the weight-loss threads people mention fatty foods being very filling and discouraging snacking, i've actually been feeling opposite -- i'm constantly hungry, and if i'm at home and there's food i'm constantly snacking. it's a little disturbing, actually, not to mention expensive for all that meat. (and it seems like it has to be meat, since i don't tolerate dairy, even butter, and even eggs are iffy -- and whenever my meat consumption goes down, my colon flares up (i have ulcerative colitis).)

I can't say anything about your specific situation, but when I was living with my dh's grandparents and I was cooking NT foods for them all dh's underweight grandmother gained weight and his overweight grandfather lost weight. I didn't try to go for specifically low carb, just all soaked and lots of butter and pastured meats and raw goat's milk. They were taking HVCLO, BO and CO at my direction too. The grandfather also when off 3 prescription medications. He went back on them again and gained weight after I got fed up with them and stopped cooking for them. They went back to their super high carb low fat diet including pasteurized skim milk and margarine. The grandmother also lost weight again after I stopped cooking for her. She is anorexic though and was really upset when she was gaining healthy weight when I was cooking.

The beauty of eating well is that your body will adjust accordingly. The book Life Without Bread has a good explanation of this. When I first went to low-carb traditional foods, I put on five pounds and never felt better.
