We have a PS2 and I'm ok with the kids playing video games, but I'm becoming increasingly uncomfortable with the amount of fighting in games.
Can anyone recommend more peaceful games?

I am very firm about this issue. I have an Xbox, but I think most of the games that we like are available on PS2 as well. Our favorites are:
Tak 2. I haven't played the original Tak but from all reviews that I found, Tak 2 is a huge step up anyway. We love this one. No violence at all.
Morrowind. This game does have fighting in it, but it is entirely optional. We play it in a very non-competitive manner, and just leave if someone comes looking for a fight. We still enjoy the game a lot. It has won awards.
Urbz: Sims In The City. This one may not be really suitable for littles, it has some adult themes, but for older kids I don't mind the kissing scenes or what have you.
Sonic. We just love Sonic the Hedgehog :love No violence whatsoever.
We also have a soccer game and a tennis game. Neither of those are violent at all.
Harry Potter. There are several of these.
And last but not least, we have a pinball game that we like, as well as some racing cars or spacecraft type games. There are violent ones out there, but the ones that we have are totally fine.
When I am looking to buy a new game, I just go to Blockbuster or what have you and browse. You can get a pretty good idea by reading the jacket carefully and looking at the screenshots.

Background-
I am not into video games all that much at all. In fact, I've told DH (who keeps trying to get me to play WoW or other stuff like that) that "I will not play any video games where I need to use violence to advance me in the game." That knocks out about 99% of all games so-
Whenever we go to the mall, or whatever, we go to the video store so DH can look. At one of them, Guitar Hero III was set up. I played it once and was HOOKED. So, on Friday, I graduated with my MS in SPED. Guess what I got? A Wii and GHIII! It is so awesome! (comes in in PS2) And Aerosmith's GH is coming out too.

Zoo Tycoon doesn't contain fighting but I am not sure if it available for PS.
Though, if the dinosaurs get out they do eat people. Also some animals eat each other if you have too many males or something, but the player doesn't actively fight.

My 6 year old's favorites are a dirt bike game I can't remember the name of, a Cars racing game, Guitar Hero and Gran Turismo.

Pinata Island!
Its a game where you raise Candy filled pinatas to send to children's parties. The worst you have to do is break open naughty pinatas who explode in a shower of candy. :)

The Monkey Island games are great. They are very cartoony with funny dialogue and the only game with fighting was "insult fighting" where you traded barbs with a pirate.
The Karaoke Revolution games are also really good. If you don't already have a mic you can usually find the game bundled with one.
And Dance Dance Revolution is awesome! You need to buy a dance pad, but we find it very addictive!

If Animal Crossing comes for PS2, that's a peaceful game that's supposed to be incredibly addictive. And I've heard great things about Katamari Damanci -- so much that it has almost tempted me to buy a console system!
