View Full Version : What do you eat for lunch???

Now that I'm pregnant again I'm in search of something yummy to eat for lunch. I usually eat fresh deli meat like roast beef or turkey but I know that deli can be harmful. Tuna fish grosses me out when I'm pregnant so I'm left either eating leftovers(yuck! :) ) or a deli sandwich.

Anyway I'm just looking for some lunch ideas!

Here are some easy sandwich filling ideas:

peanut or almond butter
cheese
mock tuna (replace tuna fish with chopped chick peas or cooked lentils)
hummus
avocado and honey mustard (on toast--my favorite!)
smoked tofu
cream cheese and sunflower seeds, served open faced

bean tacos/burritos/tostadas are also quick and easy. Cereal or scrambled eggs are also good and quick.

Well, right now I am eating a veggie hot dog with cheese and some lettuce. I do tend to eat leftovers, but I plan to have them - make too much at dinners specifically so I'll have lunches. I also make (about every other week,) a different homemade soup STOCKED with tons of veggies, green leafies and other stuff I have a hard time getting enough of. I make a big stock pot full so that I can have a bowl of soup for lunches. Then I supplement it with bread-pizza (just sauce on toast with melted cheese and you favorite pizza toppings,) or other sandwich type product. This week it was potato & butternut squash soup with mazoh balls. Last time it was collard greens in red lentil soup with LOTS of parmesan. Yum.

loaded baked potatoes!!! you can do it different every day (chili or bacon and cheese...). i lived on these when i was first pg and queasy. now i have them everyother day and a grilled ham and cheese on the other days. i can eat grilled ham and cheese everyday! it is really good with tomato slices too.

Oh man, pizza...Baked potatoes.... You moms are making me hungry as heck and I just had supper...Chili and Cornbread...Yum.

udon noodles with spinach, miso and tofu.
red lentil soup with garbanzos and curry --add plain yogurt and chopped spinach.

avocado spinach hummus and veganaise--- a new favorite.

anything to get in my greens.

Anything to get my 3 yo her greens too!

Most days I cook something for lunch, some of the things are:

Udon noodle soup
Veggie potstickers
Stir fry
Sauteed sweet potatoes, garbanzo beans and green beans
Pasta or gnocchi with marinara sauce and a veggie
Green salad with sunflower seeds and beans


If we are picnicking, I'll take hummus and veggies, almonds, fruit, whole grain bread, that sort of thing.

easy easy easy!

Just bread (I like toasted Rudi's Oatmeal bread)
sliced avocado
fresh spinach
hummus spread on one side
vegainaise (vegan mayo) on the other.

Just had it today --its the BEST.

I crave salt so I usually top it with a dash of sea salt too...

I frequently have deli turkey, but I buy it at whole foods so it doesn't have nitrates or preservative. I put it on whole wheat or a lavash, with lots of cut up veggies and usually hummus. Or skip the turkey and do the same. or skip the hummus and have cheese.

I make soup a lot, and freeze it in individual servings.

very simple: leftover brown rice with steamed frozen veggies (peas and green beans), some fresh spinch, and a little butter, s & p and any other spices you like.

salads with sunflower seeds and 1/2 can of tuna

leftovers

I always have a piece of fruit, and maybe some ww crackers or ww bread if I haven't had a sandwich.

Oh, and maybe a little piece of chocolate for dessert!!
