Hummus: puree and add olive oil, garlic, and lemon juice
Add on top of salads
Add to a pasta salad with other veggies (dressed with oil, vinegar, maybe a little honey)

Besides hummus?
I love them on salads. I also like them in beef or lamb stew. There's a really great recipe in The Greatest Vegetarian Cookbook for a spinach & chickpea soup with tahini & lemon. It's delicious! Maybe it's on recipezaar...

White Chile (a.k.a Tortilla soup. ) ... that could easily be converted to veg if nec.
1. optional: onions and garlic and butter in the bottom of the soup pot
2. add two boxes chicken broth
3. add a couple chicken breasts (cut into cubes)
4. add half a jar of Salsa Verde
5. boil for 20 minutes or so until chicken is done
6. Add a can of corn, a can of small white beans or garbanzo beans or both, remaining salsa if desired, and about 4 giant handfuls of tortilla chips
7. stir and cook until the the chips are totally melted in.
8. add a cup of grated cheddar cheese
9. garnish with more chips and cheese
ETA -
Use up to 4 cans and call it Chili instead of soup!

OMG, I love chickpeas!
In addition to hummus, they are very good in pasta sauce with wine, garlic, herbs, and artichoke hearts. They are good in soups and stews. You can add them to green salads. You can make a North African tagine (like a stew) and serve over couscous. They make excellent bean burgers. You can make all kinds of Indian dishes -- channa masala, or anything with "channa' in the name will contain chickpeas. They pair very well with all kinds of greens and leeks.

You can also roast them, which is super yummy. Toss them with some EVOO, and whatever spices you desire - we like garlic and cayenne. Cook them at 400 to 450 for about 12 minutes, turning them midway. Keep a check on them. When they are crispy outside, soft inside, they're done.
Rachel Ray also has a winter vegetable stew that has chickpeas as part of the recipe that is delicious. You can google it - it has portabellos, chickpeas, zuchinni and a couple of other things I can't recall right at the moment.

My son loves them sauteed in olive oil with some curry powder on them.
My daughter just likes them cold.
We also roast them for a crunchy take-along snack.
If they're canned, they'll keep for a while, so you don't need to use them up right away.

Chickpea curry with apples and/or raisins. I don't have a 'real' recipe but basically:
-fry some onion
-add curry paste
-add chick peas and water, maybe a bit of coconut milk if you have it
-let it simmer a little while
-throw in small pieces of apple and raisins
I thought it sounded weird but it's super yummy with rice.

Curry. Roasted with some other veggies (chopped sweet potato, zucchini, red onions) with some olive oil and balsamic vinegar and served over couscous. In a salad with chopped tomatoes, fresh mozarella, chopped basil, olive oil and salt.

You could make Falarfel. I'm pretty sure the uncooked mixture would freeze well too.
