Organic flours?

Please Bear with me as I ask lots of organic questions...newbie here to organic eating, LOL! ANYWAYS...my grocery store had a survey today that I filled out and I got to actually have a discussion with the manager. I mentioned more organc items as this particular store only carries some! He explained to me that their big plans are to make a decent size section for just organic stuff! This would be great! He even said they would be carrying organic meat! He did tell me some spots where they have been ordering organic and sticking it in with the reg food items thruout the store. One section he told me was the BULK section. SO I went over and took a peek. I seen all sorts of organic flours...the one that stuck out the most to me was the Darl organic rye flour...wondering what I could do with this? What would I do with all the flours? Do I just subsuitute flour in cookies and bread and stuff? Not really sure what to do with it and Ive only ever reall used all purpose. Thanks
BTW...the store also started carrying organic orange juice in 64 fl oz..yay! I got 2 containers! I cant wait to try it!! Is there anything I should be looking for when buying the organic orange juice? It looks just like Tropicana OJ but its called 8th generation or something like that!

oooh, that's exciting! I use mostly organic wheat flour, org all-purpose flour, and org bread flour. You could use the rye flour to make rye bread or rolls. Homemade rye is really delicious and it keeps well. Have fun experimenting!
