Made These Pancakes

just now to freeze for DD (and myself) to have for future breakfasts. Very yummy and healthy!

You need:

- 2 eggs, lightly beaten
- 2 cups buttermilk
- 1/4 cup oil, divided (I used grapeseed)
- 1 1/4 cup whole wheat flour
- 3/4 cup rolled oats
- 1/4 cup raw wheat germ
- 1/4 cup instant skim milk powder
- 2 tbsp packed brown sugar
- 1 tsp baking powder
- 1/4 tsp salt

Combine the dry ingredients in a large bowl. Mix the buttermilk, eggs and 3 tbsp oil together and then pour over the dry ingredients. Mix gently (don't overmix - just till all moistened).

I then used a 1/4 cup to scoop out the mixture onto a frying pan - which had a bit of Specturm high heat sunflower oil on it (to prevent sticking) and the last tablespoon of grapeseed oil. Cooked on both sides, flipping once. Froze them - pop into toaster when wanted - we'll probably top with a bit of unsweetened applesauce!
