small dessert ideas
We're trying a new rule in our house where we have dessert night once a week (instead of every night). We only eat homemade desserts, so the problem is that I make dessert once a week, and then we have enough left to last the whole week, and we eat too much. I've thought about freezing the rest, but I know I would dig it out of the freezer and it anyway.
Any ideas for small serving dessert recipes? Or recipes that are easy to cut down?

I make batches of cookie dough and then freeze the raw dough in cookie size balls. You could do the same and freeze in small packages of 4-6, depending on how many cookies you each eat. Just pop the frozen dough balls in a preheated oven and you have dessert with no leftovers. Since you have to cook them there is the delay factor to avoid seconds.
When I make ice-cream I sometimes make my own "hoodsie" cups using small ramekins. Each person gets one. To make them more fun I have been known to freeze with a small layer of caramel or chocolate sauce. You can't tell it’s there until you dig in! Ice-cream recipes are easily adaptable so you can make a 1/4, a 1/2, even double. So if you are afraid of having extra "hoodsies" due to temptation then just make enough for singles serving for each of you.
Instead of cake, cut the recipe in 1/2 (or even a quarter) and make cupcakes.
Baked apples are great. Just buy an apple for each of you, hollow out the core and stuff with butter, brownsugar, and some rasins and bake.
Instead of pie, cut the crust and filling recipe in 1/2 and make mini pies in ramekins or muffin tins.

What a fun idea!
I agree that individual desserts are the way to go.
Hand pies, creme brulee in individual ramekins, chocolate mousses (fun served in champagne glasses if you trust the recipients!  ) chocolate molten cakes in ramekins, tartlets, cored apples with maple syrup and cream in the core wrapped in pie crust and baked, you can even do fruit crisps, crumbles and cobblers in ramekins!!!
Instead of a batch of cookies, what about baking the cookie dough in a circle pan and cutting like pizza?

Half a pan of brownies, made family style brownie sundae by baking in a deep dish, then letting cool a bit, scoop ice cream and sauce / toppings and all dig in. I LOVE doing this. Or you can set out some toppings, then make a brownie batch and bake them in ramikins, and give everyone to top themselves. They freeze good this way, just pop them out, wrap, then reheat a little for next time.
Fondue is good because you can just make a little bit. Cakes of any kind can be made and half of it frozen by baking a 2 layer, then wrapping/freezing one. Make it torte style by slicing, fill with jam/pudding/choc, and drizzle with chocolate ganache.
Baked apples/pears with ice cream are good, all you have to do is core and half cut side up, sprinkle with nuts/cinnamon/brown sugar or whatever you like and bake, then serve with a little ice cream/whip cream.
I've made homemade ice cream without churning by whipping up heavy cream, sugar and a little milk, then just freeze it in a container. It's whipped up so it doesn't freeze rock hard and you can make a little bit
Puddings always good for something simple and it's quick easy and you can make a small batch.

desert recipe
 ,i love to cook desert too,the best of my love is Pumpkin Pie,i make it on some weekends,what do you cook every time?
there is a free recipe i found online ,you can get it according the guideline,and cook it at home.

Thanks for the ideas! The pudding and mousse recipes seem like they could be cut down easily. I can't wait for dessert night now!

Mmm, fried bananas! Fast and delicious. Just peel and split them, sprinkle with brown sugar, and fry up in a little butter.
