I need healthy travel snack ideas!!!

So, we are drivin down south (to Disneyland)on Thursday- it's about an 8 hour drive. Plus- we want to go cheap at Disneyland- so we'd like to have some snacks to pack into the park and keep at the hotel.

I am new at eating healthy and want to avoid our usual choices of beef sticks, Entemans donuts and Oreos.

I was thinking it's be cool to try some homemade granola bars, muffins, healthy cookies, etc.

Any suggestions? Spam me your recipes!!!

I'd do baggies of cut veggies, baggies of cut fruit, containers of tahini dip, crackers, granola bars or trail mix (make your own, it's easy!), and maybe sandwiches?

And we will definetly do lots of waterbottles (dont worry...not the disposable kind!!!!)...

Any whole grain cookies recipes? I only know how to make junky white flour choco chip cookies (and they are blissful...but not good for us)

here's a PB cookie recipe we use. BUT.. you can use whole wheat flour with regular recipes and it harms nothing.

1/2 cup coconut oil
1 1/4 cups packed light brown sugar
3/4 cup peanut butter (natural/organic jarred works better than fresh ground)
1/4 cup nut milk or applesauce
1 cup whole wheat flour
1 cup rolled oats
3/4 teaspoon celtic sea salt


Directions
1 Preheat the oven to 375 degrees F
2 In a medium bowl, cream together oil, brown
sugar, and peanut butter until smooth. Stir in milk.
Combine flour, oats and salt; stir into the
peanut butter mixture until well blended. Drop by rounded
spoonfuls onto ungreased cookie sheets. press with fork to make criss-cross.
3 Bake for 8 to 12 minutes in the preheated oven. Allow
cookies to cool on baking sheet for 5 minutes before
transferring to a wire rack to cool completely.

We travel a lot by car and my kids like:

Whole wheat bread & almond butter

Cheese sticks

Hard boiled eggs

Hummus on bread

Frozen Stonyfield farm organic yogurt tubes (Helps keep thing cool in cooler, and easy to eat).

I try to keep their protein intake up to hold travel gumpiness at bay.

Easy travel fruits & veggies are apples, pears, bananas, apple slices (can sprinkle with a little lemon juice-- my kids love that), baby carrots, sliced cucumbers. Melon tends to be drippy, and too many grapes cause intestinal grumblings when you eat lots...and not a good thing for a long car ride.

I always forget about yogurt!!

Mmmm..Hummus...my friend makes and sells KILLER hummus, maybe she can whip up a batch.

Where can I buy Coconut oil? I've been curious about it anyway...is it a health food store thing or can I get it a the Grocery store?

you can get it in the nutrition center at Fred Meyers or the organic section at Safeway many times, if they have those down there (should?). Otherwise at the health food store.

We like to pop up a big bag of popcorn (dressed how you like) for road trips. It fills in nicely for the chip munchies.

Freeze some of your water bottles (leave some unfrozen to drink first), they will help keep food cool and by the time you are ready to drink them they will be mostly thawed but still cold.

Clementines. At least, that is my plan for our road trip this week. I wasn't thinking when I bought the box the other week and I'm afraid they'll spoil if I let them sit until I get home. They're small, peel easily and with little mess, satisfy the sweet craving, and are yummy.

We always take cheese sticks, Pringles chips (not exactly healthy but we only eat them as a road trip treat), apples, salami and home made granola bars that are more like pieces than bar. Trail mix would be great but we can't eat nuts and I don't like non-nut trail mix.
