So, what's cookin' in all our veg-mama kitchens?
I just started working (full-time) after being a sahm mama for almost 3 years... I'm WIPED OUT and it's only Thursday!
I've done some "cook ahead" meal planning due to the new work hours and it's going well. Also, my ds is SO tired from the intense playing that gets done all day at his day care that he's been going to bed early (7pm) so my dh and I get to cook and eat together- alone. And, that's very nice. For a change. But I do miss my squirt standing in his chair along side me in the kitchen!
I got a new cookbook for xmas from my MIL ( the bold vegetarian chef) and it's absolutly wonderful. I've been cooking from it all week. anyone else get any vegie gifts under the tree? I also received a new hand-blender. Love it! We eat a ton of smooth soups and I use it all the time. Also, I received some new cast iron skillets. I've never used cast iron before so if ANYONE has any advice in caring for them - please do share. They came pre-seasoned. I don't want to ruin them!!

Happy winter to you too! Can I join? My dh and I have been vege's for 10 years (since we were teenagers)...time flies. I got "The Vegetarian Mother's Cookbook" for Christmas, it's my favorite all time cookbook! Hummmmm, what's cooking? Well, last night for desert I made poached pears and they were so good. Boil 2 cups red wine (I used Yellow Tail Shiraz) and 1 tbsp sugar (recipe called for 1 cup, way too much for me), Take 4 pears, cut lengthwise and core, after wine/sugar boils for 5 minutes, put pears in and simmer 10 minutes. Put pears and sauce in fridge (I put in freezer for 15 mins), then arrange on plate with slivers of dark chocolate and cocoa powder....delicious!

hello hello.. news from me.. i decided just before christmas, that after being vegetarian for 11 years, to go all the way vegan. so i'm in week #2 of that. much easier than i thought it would be! i don't really drink milk or eat eggs, so that is easy.. it's just the cheese thing that is more difficult. i found a good vegan cheese that melts (from Earth Island), so i've been using that on quesadillas and whatnot. still don't think i could eat it just cut up though.
i did get a good veg present.. La Dolce Vegan cookbook by Sarah Kramer. have made cookies and muffins so far (so like me to start in the dessert section LOL
: ), and i really want to make her roasted cherry tomato pasta next week.

Hi ladies, we've been "almost" vegetarian for a few years, and in the last 6mos. went completely vegetarian, and now we're easing into more vegan (though because we get eggs from a friend-who has chickens as pets but doesn't eat eggs,lol- we still eat eggs). But other than the eggs from her, we will eat no animal products. I have a million vegetarian/vegan cookbooks in my kitchen right now,lol, courtesy of the library (I own a bunch of vegetarian cookbooks though). I'm thrilled to find this thread, as I want to cook more!
I have been semi veg my whole life...even as a child I hated meat. Have been strictly veg since I was 17 (now 29). Vegan or "veganish" on and off since. I rarely to never eat dairy products and occasionally do egg whites. My son was veg until he was 3 and discovered the world of meat and he now proudly tells me that he is a carnivore.
My husband is not veg but he is more than happy to eat veg at home 90% of the time.
I rarely use cookbooks even though I have a bunch. I usually turn to restaurant food for my inspiration for making new thing as in try to recreate things that have tasted good elsewhere. A lot of my meals are 1 pot kind of dishes. Usually a mixture of a protein source, tons of veggies and rice or pasta or some sort. I like to make ethnic food too.
Although lots of people avoid it, I east tons of soy based stuff. Boca and morningstar can consider me their human guinea pig!
I hate winter in that I miss having lots of fresh local fruits and veggies. I mostly rely on frozen stuff during the winter as I think it is better than stuff picked weeks ago and trucked in from foreign countries.
Three kiddos and I are vegan and gluten free...dh sweaars he will NEVER give up meat! As a result I use the Moosewood Cookbooks most frequently and use substitutions to keep ours vegan...then dh adds meat. Dinner isn't dinner without it for him! I am in a rut though and planning on ordering more cookbooks today. I am eyeing The Veg. Mother's Cookbook, the Uncheese Cookbook and Vegan Family Favorites. Haven't decided about The Everyday Vegan yet. This is a major splurge for me!
Lucky lady getting cast iron! I love mine. I only have skillets, but I have five of them ranging from 3 inches all the way to 13. I use them everyday and they are SO easy. Just rinse with water-occasionally you need to scrub with a brush just make sure you use NO SOAP! Then put on the stove to dry, and when you turn off the burner rub some oil into them ( I use olive oil.) That's it! You are gonna love them.

I made some veggie wraps for New Year's Eve that were really tasty.
They had hummus spread on the bottem of the tortilla then red, yellow and green peppers, lettuce and mushrooms. I rolled them up then cut them into pinwheels. So simple but so yummy!
They sound yummy! We did veggie rolls with tapioca wraps (GF!) and stuffed them with mung bean sprouts, napa cabbage, scallions, tofu and avacado and used a peanut dipping sauce. It was my first try with the vietnamese wrappers and they were so easy! I love wraps.
We made a really yummy sandwich recently and I'm just loving it. Hubby made some almondaise in our Vitamix and added green onions for flavor. It was like an onion dip, totally vegan. We spread some of that on a sprouted whole grain tortilla, added lettuce, tomato, onion, avocado, veggie bacon bits, and a drizzle of balsamic vinaigrette. Fantastico!
We have also been using the dip as a spread for crackers and a dip for veggies. I think it's raw actually so that's a benefit too.
Hi everyone - have room for a vegan dad? DW and I have been vegan for a year and a half after a year of being lacto-ovo and of course we're planning to raise DD vegan.
The stuff everyone is making sounds yummy - especially those Vietnamese veggie wraps (btw - where do you find tapioca wrappers?)

Our New Year's Eve spread consisted of French bread, spinach-artichoke dip (outrageously good!), eggplant caponata, a roasted red pepper and cashew spread, veggies with hummus and baba ghanouj, and chips with salsa and guacamole. We ate ourselves silly for two days!
Right now we're on the second night of 'Neat Loaf' (great recipe from the children's book 'Benji Bean Sprout Doesn't Eat Meat'). I'm eagerly awaiting my next chance to make vegan Tikka Masala!

I've never had much of a taste for meat, but I've been moving in a more veggie direction recently. Ben's birthday party was the first week of December. I roasted a ham and a turkey, which all my guests raved over and I found repulsive. I went toatlly veggie the next day. Now I have 20 pounds of turkey in the freezer that no one will eat

I have no veggie cookbooks, but have lots of "Light and healthy" stuff that I have always just made without meat. I put DH on the South Beach diet today--he's been wanting to try it but I've been unsupportive. I'm really liking the meal plans. I have boarderline GD so I need to get my refined carbs in check. I like how simple and veggie heavy it is. I just finished a bowl of yummy salad. It looks like it will be very easy for me to adapt. At least that should work for 2 weeks, and then I'll have to figure something else out.
Any suggestions for a low carb veggie? We don't do soy, I can't deal with eggs, and meals must be super simple (still have morning sickness).

I found the vietnamese wraps at Wild Oats...they come like 60 to a pack for about $2.50. They are hard, you submerge them in warm water for about 30 seconds and they become almost noodle-like. They're awesome. I would imagine you could get them at any asian market as well. I have seen them called spring roll wrappers also.

Tonight has been stressful... DH bought a "Natural Chicken" from Whole Foods to "share" with our ds.... until now he's not had Meat... as far as i knew... But, Dh says he gives him pieces from time to time.
OK!!!! This is hard, He usually eats Pork or Chicken and it's regular old "Ralphs" meat. YUCK!!! He knows i don't like that He Eats it Let alone our not yet 2 ds!

Anyhoo... i've been Veg for a long time and It's all about Health, but has developed into a real "animal" issue, based on the "Meat" on the market out there. Even the "Organic Standards" are being loosend and i am so against the consumption of this CRAP!

Mmm... so when are you all inviting me over for dinner??
DH and I have decided we are on "diets". To me that just means I'm avoiding sweets and eating super healthy after the holidays and exercising more in order to lose the rest of my baby weight. DD is 6 months old.
DH is just finishing up cooking some tofu "meat"balls. He's an omnivore
but he loves these "meat"balls. So we are having spaghetti for dinner. Other than that I just got stuff to make a lot of soups in the next week or so. Mushroom soup, curried cauliflower soup, red soup (tomatoes, red onions, red peppers etc) and don't remember what else. Figured they are filling but light.
For lunch I had a veg Reuben. Ezekiel sprouted grain bread, organic thousand island dressing, saurkraut, and swiss. I do eat eggs and dairy. DH had meat on his.
So my big question is this (maybe I should start a separate post): How do you raise veg children when DP is not a vegetarian??? My Dh and I have lots of talks about valuing animals lives. He views it more like the Native American's that they are valuable but still edible and he is grateful for the sacrifice they make for him. In his defense, he does consume mostly all free -range meats so at least the poor critters have had a good life for a while. I know - still it's bad but he doesn't see it that way.
Anyway, he has graciously said I can keep DD veg til she's 3 and then she needs to have the freedom to decide for herself. I can't tell her how bad meat is as I don't want her to disrespect my DH and I don't want her crying at his "steak". So I have 2 and 1/2 years to get her so in love with veg food that meat will taste repulsive to her.
But beyond that - what about at relatives homes? How do you keep them from feeding children meat? And even more - how do you keep the ever curious toddler from wanting to try it????????????????
My dh is not vegetarian but at home he pretty much is because I do the shopping and cooking. When we go out to eat, he might get fish or shrimp or now that we have an organic restaurant nearby, he'll get a steak sometimes there. He read "Mad Cowboy" and some other articles and books about the disgusting things that animals are fed and he's read enough about Mad Cow and the lack of testing that he won't eat nonorganic, nonvegetarian fed meat so that definitely limits his meat eating. He bbq's fish occasionally but that's the only flesh that gets in our house.
As for our two dd's - I've talked to them about why I'm vegetarian but I want them to make their own choice. At home, they are in the same situation as my dh and eat what I cook but when we go out to eat, they can choose meat if we're at the organic restaurant. One of my dd's really likes chicken and fish. The other gets very upset at the idea of animals getting killed for food.
My first concern is their health so I won't allow them to eat non-organic meat. I try to teach them about compassion for animals so if they do choose to eat meat, I want them at least to choose animals that are not mistreated.
I treat it sort of like I do sweets - I don't want to forbid it completely so that later they might binge out or sneak to get it. I would rather give them the information and hope that they will make the right choices.
Of course, my kids are getting older (almost 5 and almost 7) - when they were little, I was in control and then it was no meat and no sugar
in our house (until recently), we had an omnivore Daddy, vegetarian Momma and vegan kids.. now, of course Momma is vegan too
my kids are young.. 2 and 4, but they understand that different people eat different things.. we don't eat meat because it makes us sad that the meat came from animals.. but Daddy eats meat, and we love our Daddy! at times, we've sort of made comparisons to things like: Momma and Ellia love to eat tomatoes, but the boys don't. Kaeden and Ellia love olives, but Momma doesn't! Momma and kids are vegan, Daddy isn't. we try not to make it into a whole 'daddy is bad for eating meat' type thing, 'cause that's not fair, and mostly we want the kids to see that people make different choices.
it really helps that Daddy is very supportive of us all being vegan, and he usually eats vegetarian at home, some meat outside the home. sometimes he'll add meat to his pizza or whatever at home, but usually he eats whatever we're having.
when our kids are older, they will have the choice to eat meat or not, but i'm really hoping they choose to stay vegan!
Ugh. I am so thankful that dh and I went vegan together! And now that ds and I are gluten-free, I'm thankful that he is willing to not eat gluten in front of ds (6). Have your omni husbands read "Mad Cowboy" and "The China Study"? I couldn't finish "Mad Cowboy" nor could I sit through Howard's documentary. I left the auditorium in tears (when I finally got my act together, Mr. H.L. himself was standing there waiting to talk to me - that was awesome!). I will always carry guilt that I conceived my child after eating beef in England multiple times from 1989 to 1996. According to Mad Cowboy, if I have the disease, it will have been passed on to my child. The dormancy period is thought to be between 10 and 40 years. England "hid" the problem for years; I have no doubts in my mind that the US is hiding the problem too, or at the very least burying its head in the sand. Ok, off my soapbox. I apologize for the rant, but this is a subject very close to my heart!
well, for my DH, i think he just tries to not think about that kind of stuff. stupid, i know. i would love love love for him to go veg, but i don't think he ever will. i would also love to make that choice for him, but it's his body and his life
I try to eat mostly vegan. My dh still eats cheese and occassionally eggs. He mostly eats them outside of the house. I told him all the stuff I have read but he still eats those things. I truly wish for his health he would at least give up cheese but I can't force him. I also wish he'd give up soda but I guess that's a whole other topic.
I gave up cheese a year ago and will probably never eat it again. My kids have a choice outside of the house regarding eating cheese/dairy and eggs. Happy to say most of the time they choose not to eat those things! Well except chocolate with milk in it but I have hard time with that one too.
