milk free birthday cake?

So we're doing a milk elimination diet for the next two weeks and DD's birthday is tomorrow :

Anyone got a good milk-free cake recipe? I just went out and bought cake mix : yesterday, but it has milk in it.

I don't care so much about it being anything else free and I want it to taste as much as possible like a regular birthday cake. I'm a pretty good baker, so I'm not afraid of doing it from scratch.

Here's a link to a vegan chocolate cake. It is sooooo good. Make sure you follow the directions completely!
I've made it for family/friends and no one knows it's vegan. I think it's way better than any box cake your can get or from scratch bakery cake for that matter. I use spelt flour in mine b/c I can't do wheat.

p.s. I bet some vegan raspberry sorbet would go great with this if you are looking for a frozen treat to go with it instead of ice cream. Not sure if you'd want to give the berries to dd though.

That cake is really good. It goes by all kinds of name. Growing up, my family got the recipe from my great-grandma's depression recipe book, and we called it Poor Man's Chocolate Cake. I've also seen it called Wacky Cake.

If you're only eliminating dairy, it's really easy. Just use any cake recipe and sub water for milk and palm shortening (or dairy free stick margarine if you can find any) for butter/margarine.
