Help with party menu!
Hi all. My daughter's birthday party is Saturday. She wanted to have a Chuck E. Cheese party, so instead of an actual overpriced party there, we are going to meet there - give the kids a bunch of tokens - let them go wild (and hopefully burn off A LOT of energy) - and then go back to our house for dinner, cake, hanging out and more play. I'm trying to plan an easy dinner that is mostly cold - so I can just pull it out of the fridge and lay it out for everyone when we get to our house. The problem is that I am having a hard time coming up with dishes!!! I know you guys will have some great ideas for me, so I thought I'd post here. Hit me with your best ideas!!!  TIA.

- layered bean dip & chips
- dip platter with hummus, guac, french onion, etc.
- pasta salad
- sushi
- fruit kabobs
- spring rolls w/ dipping sauce
- 4 bean salad
- chocolate dipped strawberries
- cold quiche (or mini quiches baked in a muffin tin)
- make your own bagel bar or "burger" bar or sandwich bar

black bean and quinoa salad ( www.vegetariantimes.com)
tortilla pinwheels (rolled tortillas layered with whatever you want -- cream cheese, shredded lettuce, and olives; hummus, tomatoes, and black beans -- and sliced into pinwheels)
bread bowl with creamy spinach dip
veggie platter
cheese and crackers
Tings, pretzels, etc.

What about home made pizza? They'll probably be jealous of everyone eating pizza around them, and you can make your own for much cheaper and healthier!

I would make a sandwich tray with cheeses and other sandwich fixins. Pasta Salad, Fruit Salad, Fruit and Veggie platter. Pretzels and chips, various dips for the chips and the veggies. A few different kinds of bread and cake for dessert. Nothing to cook, just pull it all out and relax with your guests and your party girl.

We did make-your-own pizzas for dinner a few weeks back and it was so fun! You could do the dough ahead of time and get the toppings all sorted out in different bowls before you go, then just pull everything out of the fridge and preheat the oven while the kids make their pizzas.
