Does anyone know when you can harvest celery root? Do you need to leave it for a few years? Also, does celery come back every year? I don't really want to dig up the root if the leaves are going to come again in the spring.

I'm in zone 5.

I grew it one year. The roots were small compared to what you see in the grocery store.

I'm guessing it's an annual though.

Started early enough or with a long enough growing season it should do fine.
