I save seeds by laying them on a paper towel to dry, then I put them in a small jar. For me knowing when to collect them is the most difficult part, and will depend on the plant. There is a book called Saving Seeds by Marc Rogers that has a lot of information in it. You want to be sure your plants aren't cross polinated when you are going to save the seeds. Don't plant 2 or 3 kinds of tomatoes in the same small plot.

It seems there are heirloom veggie seeds in most catalogs any more. Here a some of my favorites.

I belong to koanga gardens ( www.koanga.org.nz ) which is the heirloom seeds trust over here. We're in New zealand so I doubt that would be any help to you. However, they recommend a book called Seed to seed by Suzanne Ashworth which they say is the best book they've ever seen for seed savers. I save my seeds in a haphazard way but so far I've managed to get second year pumpkins & cucumbers. I also save seeds out of especially nice organic veges I buy.
