How long will red potatoes last? and another ? - Mothering Forums

I just got a bunch of red potatoes for free from a local lady who let me scavenge her garden. She dug me up about 20 lbs or so of beautiful reds, so I have them in a bucket with the dirt on them and am hoping that they will last a bit like that. They are in a cool room.

Also, I have a bunch of huge carrots from her and was thinking about blanching them and freezing them for copper coin carrots or to use in stir fry. Does this work well, any done done this?

We'll dig our potatoes in the next 1-2 weeks. We keep them in the basement in the cold storeage room & they're good till about may. rub the dry dirst off with your hands.

Carrots, I'd store in the fridge in a plastic bag with a wet napkin. rewet the napkin as needed. They don't freeze well.
