i would be interested to know in more details what works for you ...

 

forgot to eat a few pieces of fruits yesterday and had too little exercise, keeping the kids entertained during the school holidays AND sticking to a better eating plan/exercise plan at the same time ... is getting hard by the middle of the second week ..... (am dreaming in advance of the swim i'll try to get on Monday am ...)

I think a very important part of what I'm doing is that I'm FORCING myself to drink water constantly between meals and snacks. 

 

Breakfast -

 

banana and coffee with coconut creamer

or

bowl of oatmeal with a little maple syrup...sometimes with raisins and/or sliced almonds

 

 

Snack -

 

raw fruit and veggies...sometimes I have an apple and a few baby carrots, or a few pieces of raw broccoli.  Sometimes I have an orange.

 

**The veggies never "sound" good to me, but I'm trying to be mindful of making good choices despite the way I feel.  By the time I'm in the middle of crunching those carrots or broccoli, I usually realize they're not half bad.  :)

 

handful of almonds and a handful of raisins.  - This feels like a real treat to me.  lol 

 

 

Lunch -

 

Vegetable soup - I usually make my own quick little bowl of soup stovetop.  One of my favorites is a cup or two of vegetable broth in a small pot, 3 heaping tablespoons of chunky spaghetti sauce, leftover cooked veggies from the fridge such as sauted peppers and onions, and a few spoonfuls of cooked beans.

 

Peanut Butter and Jelly with a side of raw veggies with hummus or salad

 

Grilled "cheese" and tomato soup (Campbell's Select Harvest makes a tomato soup that is either vegan or as close as I can tell from the ingredients)

The cheese is a cashew spread that I make and keep in the fridge.  It spreads on like hummus.  It is yummy dipped in the soup and my husband loves it.  :)  We have this once/week at least.

 

 

Snack -

Dinners -

 

Sweet potato and black bean enchiladas - our all time vegan favorite!  My kids love this.  There's a bunch of recipes out there, but the way I do it is simple, easy and delicious!

Easy Sweet Potato Black Bean Enchiladas

 

Scrub, peel and chop one sweet potato.  Saute it over medium heat in coconut (or other) oil for about 5 minutes or until tender.  Mix in one can of black beans and 1/2 jar salsa verde.  Salt and Pepper and any other spices you'd like to add.  Spray a casserole dish with oil.  Spoon two tablespoons of the mixture inside a corn or flour tortilla and roll up to the side of the casserole dish.  Repeat with the rest of them...usually can fit 8-10.  In a bowl, mix up  2 tablespoons or so of tomato paste and the other half of the salsa verde.  Spoon mixture on top of the enchiladas.  Top with black olives if you'd like.  Bake at 350 for 1 hour.  While it's baking, if you happen to LOVE cilantro like we do...chop a bunch up while it's baking, and when it comes out...throw some lovely handfuls all over the enchiladas.   I'm not kidding guys...this is a fantastic meal and re-heats nicely for lunches!  :)

A big old humble pot of beans to serve over rice, or sometimes a baked potato...which reminds me of another dinner we love...

 

Vegan twice baked potatoes.  Bake potatoes gutted and the pulp blended with a little almond milk, t of miso paste or soy sauce, salt and pepper, garlic, and steamed broccoli.  We refill the potato shells and bake for another 30 minutes or so.  These re-heat nicely for lunches.

 

Tofu and veggie stir fry over brown rice

 

Vegan Soup - we've tried a few varieties

 

Black Bean Burgers & salad

 

My easy kid friendly fave - whole grain or sometimes gluten free spaghetti with jarred chunky tomato sauce (I've been happy to see that there are plenty of decently healthy, even organic, vegan varieties.  We don't even miss the parmasan.  :)

 

 

 

This is just a small sampling.  After several weeks of eating vegan, we've learned tons of recipes, that we figure will come in handy whether we remain vegan long term or not!

I was 137 Monday morning...but I was 136 Tuesday morning and today!  I'm feeling really optimistic and motiviated.

DBF decided to be sweet and got me a ....hershey's cookies and cream bar.... arrrgggg! OMNOMNOMNOM!! lol.

 

I love that he was sweet...just wish the chocolate bar didn't kill my carb count. Oh well. It's a new day tomorrow. Sheepish.gif

Sigh. Feeling really discouraged this week. I feel like I've been sticking to my diet well, and actually feeling kind of hungry and dissatisfied but not giving in. I've also been doing a bit better with exercise. The scale, however, is going the wrong way. Not sure what I'm doing wrong...

... it helps me sort of "re-wire" my brain to think that these can also be "normal" meals ... am always second guessing things, feeling sad that i didn't learn "proper nutrition" when i grew up .... so it's a work in progress, still after all these years ....

I was hoping to lose at least 1 this week, but I stayed the same, 217.   I was down in the middle of the week, but AF showed up and I'm going to blame her.  I did manage to get my mile swim done this morning despite AF, so I'm thankful for small achievements!

A loss of one pound, but Im just grumpy with myself.

 

I started this challenge with such a positive attitude, and such motivation. DH and I have been fighting, nursing has been a huge challenge, and I just feel like pigging out all the time.

Keep up the good work ladies!  Daylight Savings time kicks in here in the United States this weekend so that means more light in the evening. I want to get out and walk more.  What exercise change up will spring bring for you?

Oh man... these past 3 days or so have been hell. DBF brought home a cold and it has spread throughout the household. Ugh... so I started to drink more juices and teas, eat more veggies, fruits, and soups with some carbs, and not exercising for more sleep. I haven't counted my carbs because my head hurts so much, I didn't even want to count anymore...so I just ate whatever was healthy and available. I'm afraid of going on the scale now. greensad.gif

 

Anyways, to change up my exercise routine, I have liked my routine but I need to do more weight lifting. My arms need toning. lol. I think the Beachbody company didn't realize that the schedule I am doing doesn't have much weight lifting in it. I might have to do a modified schedule that works for me.

I'm sorry I forgot to update last Monday. I had been at 150 after moving the scale to a flatter part of the bathroom floor. I did start reading a diet book called "Shred" and was down to about 145 by day 3 - I figure it's all water weight. I've been off the diet for half of today due to being out when I didn't plan to be out. Tomorrow we'll be travelling and I don't know what to do about the food. I had a great-aunt die today AND came home to find that one of our hens is missing, presumably dead as well. I'm hoping that she'll show up tomorrow because she tried to hide from the other chickens (up and coming rooster chasing the girls around getting ready to challenge the head roo) a few days ago. I will update my weight on Monday to see if I'm at least stable.

am desappointed .... but then i had a rather hard week and my eating has not been so good

so not too surprising that i put back on 1.5 pounds .....

my next doctor appointment is in 10 days only

not sure i'll be able to get below 70 kg .... (154 lb)

I'm at 216. Down another pound!   I had a tricky start to the week, AF + cold + DD2's birthday, so I'm happy that I was able to recover instead of giving in for the rest of the week.
