i just picked up the book and want to try it - but obviously there is a meat recipe for every night's dinner. they don't address vegetarians at all in the book. i'm going to try the website next but i figured i'd ask here first.

I am neither on South Beach, nor a veg (any more...) but I saw a really good artical in Vegetarian times mag a few months back on South beach as a veg. Maybe search ???

I have read South Beach and also checked out the Atkins web page (they have a crab counter that was a nice reference for thinking about the foods I like to eat). I don't eat any meat or eggs, and I won't eat artifical sweeteners, but I do eat a low-carb diet. I eat homemade granola for breakfast (made with oats, canola oil, Maple syrup, and nuts) most mornings, I eat lots of veggie burgers, green beans, califlower, broc, zukes, asparagas, lettuce, collards, kale, chard, etc. I also eat cheese and beans, nuts, nut butters, some yogurt (sweetened with maple syrup), and some fruit, especially berries now that they are more in season. I work out 3-4 times every week and I started making these changes to my diet in mid-Feb. I have lost about 30 pounds since then (and I regularly eat other things like a pizza on a date night or an ice cream at the park with my son - not all the time, but enough).
