Yesterday, I made some sweet potato cookies (from Nourishing Traditions) and ds loved them! So now I'm looking for other ideas to get him to eat veggies. He normally won't eat any except for potatoes, so the sweet potatoes were a big deal. Cookies work the best for now, I think, although I found a beet cake recipe that looks pretty good.
the cookbook Deceptively Delicious is entirely dedicated to this concept. my mom got it for me. basically all the recipes hide pureed veggies in them. i ignore some of the stuff (like telling me to use margarine
) but the couple of recipes i've tried have worked out pretty well, and also got me thinking about ways to enhance the nutrition of other things i cook. my kids will eat anything, but i still like the idea of enhancing the nutrition in all the things i cook.
If you go to Foodtv.com and search for pumpkin cookies, they have a great Pumpkin Chocolate Chip Cookie recipe that is AMAZING!
