Today I am making Beef Red Chile-from Calf. Chile Pods. I usually beg my mom to make the sauce and then I hoard it in my freezer. Sometimes I used frozen from the store or canned if I can't get any.
Then I am making Green Chile Enchiladas. I usually get them already roasted when I drive by a Mexican market on the North side of town. Today I am roasting my own outside on the grill. Maybe in the future.. I could use the fire pit and put everyone to work (nites we are sitting in the back yard )
I didn't make my own tortillas yet though. I did see this site today and I am thinking it will come in handy
