I am in a food rut, pregnant and nursing and STARVING all of the time. I am too tired and rarely have the time to cook but I need your no cook/low prep/little cook food ideas. We're GF but can usually modify any ideas to make it GF so please give me all of your ideas!

This is what I have so far:

-Yogurt
- Cheese & fruit/crackers
- Nachos (just put tortilla chips under broiler with cheese and beans and then top with sour cream and avocado)
- Wraps
- sandwiches
- English muffin pizzas
- nuts



And that's about all I can think of. Please give me your ideas, I am going to the store later and always flounder and end up with pieces of meals and nothing to eat. HELP! ::

I like "snacky" meals - like peperoni, triscuits, and cheese (like a grown up lunchable)
My most favorite recent snack/meal is half of a cantaloupe and then stuffing the hollow/seed part with cottage cheese, cinnamon, and a little sweetener... MMM!
Burritos are also easy! tortilla, beans, cheese

We like breakfast for dinner around here, so how about some pancakes? Whenever I don't want to cook, I serve them either with eggs or last time I cooked up some turkey sausages to go with it. Yum!

Here is a dinner recipe for Black Bean Mole that is easy and de-lish:

2 cans black beans
1-2 cloves garlic minced
1 T olive oil
16 oz salsa
2 tsp unsweetened cocoa powder
1/4 tsp cinnamon
1/2 tsp chili powder
1/4 tsp cumin

Throw everything but the coconut together and simmer for 10 minutes. Toast the coconut for a few minutes in the oven. Serve over cous cous or rice and put the coconut on top. You can also top with shredded cheese and/or sourcream.

Other things off the top of my head:
Hard boiled eggs (by themselves or on chef salads)
Lentil soup
Omlets
Homemade mac and cheese (pasta with butter, parmesan, splash of milk and garlic salt)
quesadillas (just cheese and tortillas, takes like 2 minutes)

Ok, there you go. Eat up mama! I know how it is to be pregnant and nursing!

We're also gf. I always keep a pot of hot rice, millet or quinoa in my rice cooker so I can use it easily for hashes, stir-fry, or to top with chili, red beans and sausage, meatballs, etc.
