Does anyone have a good beans and rice recipes that are easy and maybe even crock pot friendly?

Here's what I do:

Soak beans overnight, drain, and rinse.
Put the beans in a large pot with 1.5 times as much water as there are beans (so if you had 4 cups of beans you'd do 6 cups of water)
One 12-ounce package of bacon. Trim off most but not all fat. Chop bacon into little chunks and add to pot.
1 yellow onion, chopped fine
Salt, pepper, and cumin--I don't pay attention to the amounts, sorry!

Boil for about 20 minutes then turn the heat down to a lightly-bubbling simmer and cook until the beans are the texture you want. I usually cook them until they're very soft and like refried beans...but not fried or refried. I like mine either in a burrito with veggies, or else with grated cheese melted over it and eaten as a dip. :

I overnight soak and then cook 1-2 bags black beans for a couple of hours, then freeze in 1.5 cup portions (approximately the same amount as in a can.)

To make my fave, simple rice and beans dish, I cut up 1 onion, 1 gr pepper, and a/b 2 garlic cloves and sautee in olive oil or ghee. Then I add 1.5 cups diced tomatoes (you can use canned) and sometimes add a couple of chopped green chiles (usually from a can). You can also buy a can of diced tomatoes w/ zesty/hot chiles instead.

Add the tomatoes, then add 1.5 cups of beans. I then add equal parts chili powder and cumin to taste, then some salt as well. Add 1 cup uncooked (brown) rice, plus 1-1.5 cups water. Simmer until rice is cooked. Or, pre-cook rice and add 2 cups cooked rice to the rest and just heat until hot and the flavors are blended (15 minutes or so). (When I precook the rice, I usually I cook it in bone broth for the added minerals).

This is, so far, my favorite rice and beans dish! : Enjoy!

This is a really good red beans & rice recipe. I have never been to this restaurant, but the recipe is a good one!

Some changes I make: I use small red beans (not kidney beans) and just half of one of those kielbasa cooked sausages. I think half is plenty, and I freeze the other half for the next time I make the beans. Sometimes I don't have the celery, and it is still good. I also drain the water, and use fresh water. I haven't noticed a difference in taste.

Love the topping of shredded cheddar cheese and green onions.

rice and bean salad

I use fresh spinach for the base but you can use any greens
top with cold cooked brown rice ( or whatever rice you have)
then cooked black beans (again any beans you like are fine)
then lots of fresh salsa, or jarred
some fresh cilantro and yogurt on top.

It is soooo nice on a hot summer day.
I like to mix it all us as I eat it.
I have made it with canned beans, just open the can and drain and use. But now that I have more freezer space I usually use my own cooked beans, I add spices and an onion when cooking, sort of like what JR does, only don't cook the beans down to such a soft texture.
