Breakfast you can prepare the night before?

I really am better with cooking breakfast if it is something I can make the night before. I already looove baked oatmeal and muesli, but we need more variety. Any other things that can be prepered the night before and popped in the oven in the morning? For the record, DP does not like eggs. I use them in baked goods, etc, nbut he does not like to eat anything that actually tastes like eggs.

Off the top of my head:

Popovers
Baked French Toast
Cheese (or fruit) Blintzes
Muffins (sweet or savory)
Fried Chicken and Waffles (made the night before and toasted)
Cinnamon (or raisin) Bread

Steel cut oats in the crock-pot with fruit. Cooks all night and it's hot in the morning. Just make according to package directions. I think it's 1 cup of oats to 4 cups of water, plus salt, brown sugar and cut-up fruit.

I put the leftovers in the fridge and reheat. When I reheat I add a little milk or half and half sometimes.

muffins stuffed with fruit and nuts.
sandwhiches - like lunch food is OK too.
sticky rice - rice with cheese.

crepes stuffed with veggies/meats or cream cheese/fruit
