I'm looking for a cookie recipe that utilizes only maple syrup, honey, or a combo of the two. I did a quick search and can only find recipes that also include sugar. Anyone have a tried and true recipe with only ms and/or honey?

The peanut-butter teff cookies on the back of the Bob's Red Mills teff flour are SO yummy. They are basically just teff flour, peanut butter, maple syrup and salt (maybe baking soda, I forget).

Happily married to DH for 6 years, in process to foster-adopt 3 children DD4, DS3 and DS2. We may be bringing half brother age 9 one day as well! We are not infertile, we just have decided that since there are precious children who need homes there is no need for us to have biological children.

1/2 cup/125 mL oil

1/2 cup/125 mL honey

1 egg

1/4 cup/60 mL water

1 tsp/5 mL vanilla

1 cup/250 mL whole wheat flour

1/4 cup/60 mL dry milk powder

1/2 tsp/2 mL baking soda

1/4 tsp/1 mL salt

1 1/2 cups/375 mL rolled oats

1/2 cup/125 mL ingredient of your choice (chocolate chips, carob chips, nuts, raisins, seeds, or coconut)

Preheat the oven to 350F/180C.

Grease some cookie sheets.

In a large mixing bowl, put the oil, honey, egg, water and vanilla.
Beat until smooth.
Add the flour, milk powder, baking soda and salt.
Mix well.
Add the oats.
Mix well.
Add the extra ingredient of your choice.
Mix.

Drop the batter by spoonfuls onto the greased cookie sheets.
Bake until light brown (about 10 minutes).

1/2 cup/125 mL dry milk

1/4 cup/60 mL peanut butter

1/4 cup/60 mL honey

1/4 cup/60 mL oats (quick or old fashioned)

1/4 cup/60 mL crisp rice cereal

Put all ingredients in a bowl and mix well.
Using your clean hands, shape the dough into 1 inch/2 cm balls.


Put another 1/2 cup/125 mL crisp rice cereal into a ziplock bag. Crush the cereal with your hands.


Place the balls, a few at a time, in the bag. Shake until the balls are covered with cereal.


Eat immediately, or store in a covered container in the refrigerator.
