My bread sinks in the middle - what am I doing wrong? - Mothering Forums

I have this amazing recipe for rosemary bread. I've made it three times. The first time, it turned out absolutely perfectly. The second and third times, it ended up sunken in the middle and tonight's tastes kind of yeasty. They rose just fine and looked normal when they went in the oven. There were no loud noises or anything that would make them fall. I'm using those little packets of yeast, so I know I'm using the right amount. What am I doing wrong?

You're in Frankin and I'm in dayton I am guessing it's the weather! It's been really all over the place, hot, cool, humid, dry as a bone. Maybe the weather is working your yeast?

When you tap it does it thump and sound hollow? or does it sound full and soft? Do you have pics? I would have to see the crumb to tell you what's happening.

Bread can be very fickle, the more bread you make, the better you get at troubleshooting

It doesn't sound hollow at all. It did the first time, but not the last two. Maybe it is the weather - we have that weird storm system moving through tonight that won't make up its mind if it wants to rain or not.

It rained here for a moment, it cooled down and got humid, if I was making bread that would have probably have made me VERY cranky!

Your bread should sound hollow when you thump it. It sounds like it could have used a little more time in the oven and wasn't 100% done in the middle.
