Looking for a recipe for a hearty, somewhat healthy cookie. I'm envisioning something with things like oats, flax, dried fruits, whole wheat flour. Possibly something like sunbutter, too, since DS is allergic to peanuts. :) Thanks in advance!

My dd is allergic to nuts, too.   I make cookies loosely based on the quaker oatmeal box.  Except: 

 

I leave out the cinnamon

I add a little bit of chocolate chips

I add sunflower seeds and pumpkin seeds

I use whole wheat flour

I cut the raisins in half

 

the chocolate chips help everyone to feel like they are having a real treat!

I got this from the MDC Dingoes blog a few years back.  We've never had them for breakfast but they called them breakfast cookies.

 

2C whole grain cereal flakes, crushed

1/4C each of wheat germ, WW flour, white flour

1/2 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

1/4 cup dried cranberries or raisins (I've only used raisins)

1 egg

1/2 C brown sugar (I've used less, but anything less than about 1/4 cup doesn't taste cookie like to me anymore!)

1/4 C oil

2 tsp vanilla

3/4 C mashed white beans & 1-2T water (or you can use 3/4 C ricotta cheese)

 

Combine liquid, mix in dry.  Drop onto cookie sheet.  Sprinkle with cin/sugar.  Bake 400F 16-17 minutes.


Me.  With 1 spouse, 4 kids, 16 chickens, 74 matchbox cars, 968,562+ legos, a dishwasher waiting to be emptied, a washing machine waiting to be filled and a lost cup of tea in the house.

Here's a highly rated recipe (121 reviews...5 stars) from Ellie Krieger. I haven't made it, but I have had good luck with some of her other recipes.  :)

The other recipe posted above (with the wheat germ and mashed white beans) looks really familiar. It might be from one of the Sneaky Chef books. I know she has at least one breakfast cookie recipe.  I've also had good luck with her recipes.
