Beans and Rice combination ideas - Mothering Forums

Ok so it doesn't have to be beans and rice but a legume/nut/seed and a grain, basically looking to make a complete protein out of plant based proteins in one meal, not necessarily one pot.   


I like making a big pot of beans to eat throughout the week, making the rice as needed/fresh for the meal.


Currently I make pinto beans and spanish rice as well as black beans and cilantro rice.  That's it.  Hoping to find some inspiration or recipes from some of you.

I make white beans with garlic, lemon, sage and kale and serve them on top of polenta drizzled with a little olive oil. I add cannelini beans to spaghetti sauce.
