I am scheduled to deliver a meal to an awesome Mama who has just welcomed a new addition to her family.  I'd like to bring her something delicious, healthy & protein-rich.  Her husband is allergic to corn and shellfish.

eta:  She is also staying away from beans.  Also:   I'm planning to prepare a buttnernut squash recipe with nuts & parsley as a side...

 

Any suggestions?

I like to put a whole chicken in there, or you could use pieces, smeared with a paste made of ground herbs (I use rosemary & lemon balm), garlic, salt , pepper & olive oil. I put a splash of white wine in there but you could easily use stock or even water if you'd like. Makes the house smell lovely.
