It's been so hot lately that I've broken out my slow cooker so I can cook in the a.m. when the kitchen is still relatively cool.
The problem is that all the things that seem summery - pulled pork, for example - are just too much meat to eat very often. Anyone have any vegetable-based meals I can cook in the slow cooker?
