I think whole grain bread is scary to make. So I have been working on this one and I think it is ready to share. I took elements of different recipes and kind of worked them together and have come up with a winner...
IowaOrganic's Whole Grain Bread Recipe
In a sauce pan heat 1/4 c butter, 2 c whole milk, 1 c water, and 1/3 c honey till warm
In your mixing bowl combine 4 c whole grain flour (I use vita-spelt), 1 T salt, 1 T LEquip dough enhancer (whey protien basically), 2 T gluten, 2 T yeast and 1 egg.
Add your sauce pan to your mixing bowl and combine. Use your bread hook and work in an additional 4-5 c flour. When/If your mixer can't take it anymore- knead in a little more flour by hand until you have a nice smooth and elastic dough (mine always seems a bit sticky though). You want to do this fairly quickly- like mixing the bread dough should take less than 5 min. because your gluten structure is pretty delicate. Form into 2 large loaves or 3 smaller ones. Let rise in a warm place until doubled and bake for 30-35 minutes at 350. Just to be clear- you are only letting it rise once.
I love this recipe for its awesome taste and the fact that from pulling out the ingredients to buttering a hot slice it takes less than 2 hours. I hope some of you enjoy as well.
