I understand that you can use more of your fruits and veggies with VitaMix, so you'll get more vitamins and minerals from the peel, pith, and more of the core. However, if you really liquify them, do you lose the digestive benefits of the fiber and the carb offset which reduces the net carbs?
If the VitaMix you are referring to is the blender and you are just wondering if you blend them down to liquid, then yes, the fiber is still there. Think about it like this, a lot of people out there take a fiber supplement, and most of those come in powder form that they mix into their drink. Same thing here, but your way is better. It doesn't matter what form the fiber is in as long as you eat it.

vitamix makes a smoothie - not 'juice' - that watery kind.
essentially what the vitamix does is it really just liquifies all the food you put in there.
you dont lose anything.
you dont lose the digestive benefits of fiber because fiber itself is not digestable. it provides teh bulk to eliminate. its just the vitamix turns solid fiber into pulp.
i am not sure about the carbs or even understand what you are trying to say. is the carbs affected because it goes from solid to pulp? i have no clue.
so when you juice in a juicer you have two outputs. one the juice, the other the fiber/bulk that you throw out or compost or maybe use in your cooking.
with vitamix you only get the smoothie. there is no other output
you'll have to add water to the vitamix - or some sort of liquid to help blend your mix.
