I've had good luck with roasted root veggies. Cubed carrots, turnips, potatoes, leeks, tossed with olive oil, salt and rosemary. It smells fantastic while it's roasting. My kids eat some, not a lot of it.
Love roasted vegetables.
Don't know about kids - mine have always been pretty good about eating veggies - but when I roasted beetroot, tossed it with balsamic vinegar, fresh herbs and a little goat cheese, it was the first time DH ate beets in years. He loves roasted beets now.
Yum, the vinegar and goat cheese sounds delicious.
I made the roasted veggies last night, and made an extra big batch. Carrots, potatoes, a leek, a purple onion, some beautiful beets and a handful of radishes. We keep getting radishes in the produce delivery and we're not really into them, so I figured it couldn't hurt to try roasting them. Meh. They were fine, but I wouldn't bother again.
But yay, left-overs!
