What are your thoughts on this cooking technique? Is it safe and healthy? I remember reading something about it a while back about it potentially causing cancer. Have you heard this and if so, do you know what in particular regarding the process of smoking is carcinogenic?
I think everything in moderation is the key. I smoke food on a fairly regular basis, and I don't have any health concerns about it. I don't want to mis-speak on the carcinogen question since it's been awhile since I've read any articles on it, but I've heard of that too.
