I've tried this recipe for Ritz Crackers and it's super good, but definitely takes some time investment to make and goes really fast: Ritz Crackers.

I will also make protein bars with fruit purees (whatever I have on hand) and a couple scoops of protein powder, some sweetener, flour (I use a gluten free blend) baking powder, and a few spices. DD loves them.
Other snacks that are popular at our house:
Yogurt (we get full fat plain and mix it with naturally sweetened jam)
Hard boiled eggs
Cold chicken pieces
Bacon (or pancetta for a super special treat)
Home made trail mix (nuts, seeds, dried fruit)
Hummus and Veggies
Fruit and vanilla yogurt
Rice crackers (probably healthier than goldfish, we get them from trader joe's)
Chips and guacamole
Sweet potato fries
Grits mixed with jam (DD LOVES this)
Slices of fried polenta (the kind from Trader Joe's that comes in a tube shape, we cut it and fry it up-soooo good!)
