I tried this recipe this morning: and it turned out horrible! Even on really low heat, the pancakes burned before I could flip them. Any other recipes or advice?

I have really good luck with this recipe:


5 eggs

1/3 cup coconut oil

3 tablespoons coconut flour


Season as desired, I use cinnamon, vanilla, and sea salt.  I can't remember where I got the recipe from, but it works really well.  I have to use an immersion blender and make sure I add the coconut flour a little bit at a time.  Then it needs to sit for a few minutes to thicken up.  It's super simple and they come out nice and light.  And, although you can tell they are made with coconut, aren't overwhelmingly coconutty.  I do have a problem with burning when I have tried to add extras (like one time I tried chocolate chips....not so good).  Bananas just don't last long enough here to add them to recipes, so I don't know if they would hold up.
