I hate heating up the whole house to feed people in the summer, and we tend to want to eat lighter. What kinds of meals do you have in the summers?

Funny, I'm just thinking about this because I need to organize my shopping list for the farmer's market and grocery store.

 

In the past 2 weeks, we've already run through my standard go-to dinners for hot summer weather. I've already served "big" salads like salade nicoise, broccoli salad and potato salad at least a couple of times each. I've tried some new fruit salads as sides. I've given the grill a workout with fish and chicken.

 

I'm not fond of cold soup, so that isn't really an option for us, but perhaps someone else would like it.

 

I think I'm ready to set out sandwich fixings and call it a day.

Watermelon and cucumber salad was a hit last night with dinner. Even my 5 yo ate it and had thirds. That kid won't eat anything, so it must be good! eat.gif

I make homemade guacamole w/ red onion, avocados, steamed peas and/or kale, spinach, and our favorite salsa, a few dashes hot sauce and garlic sauce. Maybe a few chopped tomatoes or herbs if I'm into it. Then we dip in organic blue corn tortilla chips, carrot chips, pepper slices, cucumber slices.
I usually serve these w/ smoothies, lol. Chopped fresh carrots, dates, tofu/yogurt, favorite unsweetened milk, baby spinach, chia seeds, flax, lots of fresh/frozen fruit. a little honey or maple syrup, ice cubes, whatever we have on hand. Then we all just "sip and dip" as my husband calls it, lol.
