I got mine today and it was pretty fast, maybe 2-3 weeks! I want to start the starter but thought I'd ask you if you used UB flour and potato water like they suggest or did you somehow modify the starter directions?

i just started with filtered water & unbleached flour, but added a dab of barley malt (which that yeast particularly loves.) works fine. (i've fed it with oatmeal, rye, wh wt pastry flour, whatever i have handy.) but no chlorine in the water please!
