Hi guys,

Let's see if I can remember:

Daughter's Menu
AM
Rice and Shine hot cereal w/acidopholus, digestive enzymes, flax oil mixed in. Snack was pureed pear and applesauce and rice puffs.

Midday
Glutino rice pasta, pinto beans, peas and carrots, rice cake pieces. Snacked on sorghum bread.

PM
Avocado, some of my rice and beans with peppers, onions, garlic and olive oil.

Snack - stewed prunes. Later she asked for cereal but it was getting too close to bedtime so I faked her out!!

My menu:
AM - Sorghum bread with blueberry spread.

Midday - Taco salad with veggie refried beans, lettuce, tomato, avocado, bearitos chips and arriba taco sauce. Digestive enzymes, acidopholus, b12 and vanilla liquid calcium magnesium--yummy and tastes like marshmallows. I have to check to see if it is vegan. I don't think it is though.

PM - Rice and black beans with pepper, onion, garlic, olive oil. Snack late evening on Koala Krisps (My Weakness) cereal with rice milk, sorghum bread with blueberry spread and herbal tea.

And Water, water, water.

I tried to make pecan milk today. I'll let you know tomorrow how it turns out!

Can't wait to see everyone else's.

Breakfast - Sourdough toast with pumpkin butter (it's green! What's not to love!)

Lunch - Celentano Vegan frozen entree at work - vegan manicotti stuffed with tofu, broccoli and spinach with red sauce, a few pieces veggie sushi

snack - potato chips (not my healthiest snack here)

Dinner - went out for vegan Japanese - I had a garden roll with all sorts of veggies, Goma Ai (cold blanched spinach with broccolini and this amazing sesame miso dressing) Wakame seaweed soba noodle soup, green tea, hot sake

Dessert - Black China's Vanilla Bean Cake with rice dream to drink

pumpkin butter is awesome! We like Omega Nutrition's the best. It is VERY hard to find organic pumpkin butter, and ON's is the closest one will find. You can order it online.

today we ate:
cateloupe, toast with nut butter and fruit spread
orange tea
'pops' - frozen fruit smoothie on a stick
avocado, black bean 'dip' with blue corn chips
'energy bars'
pasta
watermelon
lots of water
protein smoothie
pickled cucumber and sweet onion salad
grapefruit
bean, rice, tomato, 'cheese', sprouted whole wheat wraps
corn on the cob

But the days not over yet.

I love pumpkin butter too!! I make it myself. Here is a good recipe:

Pumpkin Butter
3 1/2 cups fresh ground pumpkin or canned pumpkin purée
2 1/2 cups light brown sugar
1 lemon, juice and grated rind
1 tablespoon ground ginger
1 1/2 teaspoons cinnamon
1/4 teaspoon allspice

If using fresh pumpkin, mix with sugar, lemon, ginger, cinnamon and allspice in a large bowl. Let stand at room temperature 8 to 10 hours

Transfer to a heavy saucepan, add 1/2 cup water and bring to a boil. Simmer on low heat, stirring often, for 40 to 60 minutes, to desired consistency. (With canned pumpkin, mix ingredients in heavy saucepan; bring to a boil and simmer on low about 20 minutes, to thicken.)

Pour mixture into hot, sterile, 6-ounce canning jars, leaving 1/2-inch headspace. Seal with sterile, 2-part lids and rings, as manufacturer directs, processing 10 minutes in boiling water bath. Cool; adjust seals.

Makes five 6-ounce jars.

This is a good excercise. I am 16 weeks pregnant today and, although I'm not sick, I still have no appetite.

Breakfast: Smoothie with 1 banana, 5 frozen strawberries, 8 oz. o.j., 8 oz soymilk and a big scoop of protein powder

Snack: finished a Cliff "Builder Bar"

Lunch: bagel with tomato, onion, tofutti cream cheese and a couple of fake deli slices

Snack: Pita with hummus and tomato

Dinner: Pasta with zucchini and red sauce and chips with homemade, homegrown fresh salsa

And..since I still can't take my prenatals without food i will have a peanut butter and jelly sandwich before bed.

All this and I still have not gained a pound, although I look like I swallowed a kickball already.

Mom to three 14 y.o. rock star grrl, 5 y.o. knight in spazzy armour and baby Juniper, born still @39 weeks 4 days 2-3-10 .

dh's homemade granola with rice milk for breakfast with LOTS of coffee (I am still having coffee).
For a snack homemade tomato-basil hummus on tomatoes with sea salt.
Have not gotten past lunch yet, but this list is making me crave some Black beans and rice with chunks of avocado and dh's homemade SPICY chipotle salsa

My kids are having an oatmeal frenzy. Yesterday they ate it all day with organic liquid appple sugar--yum!
Oh, and they did find my secret stash of Jelly Beans, but rejected them as they were too sour more for me!

This looks yummy, but it's not the pumpkin butter I was talking about. We eat Pumpkin SEED butter. It's not sweet. Just the ground seeds, like peanut butter, but green. It has a really distinctive flavor. Mixed with a touch of maple syrup, it makes a nice sweet salad dressing. But we eat it on sandwiches or in wraps instead of other nut butters. Because it's from the pumpkin seed, and it takes a whole lot of them to make a jar of the stuff, it is extremely hard for any producer of it to be 100% certified organic.

But, I'll still be trying your recipe, LisainCalifornia. Have you ever tried it with molasses or rappadura, instead of the sugar. Just wondering what the result might be. Maybe I'll do maple syrup instead. looks really yummy. thanks.

Wow! I learned something new today!! That is cool! I bet that would be so vitamin packed to use the seeds of the pumpkin. I have never seen it in the market--do they ever sell it at Trader Joe's or Whole Foods?

I have never use molasses or rappadura for my sweetener---I am not sure how it would work? Is rappadura liquid? It might get too moist.

Yes, I meant pumpkin SEED butter. I eat them same one as Zealsmom and I buy it at Whole Foods. Omega Nutrition - it's in a black plastic container with a green and orange label. www.omeganutrition.com and 1-800-661-FLAX

At Whole Foods, it's about $16 for a 20 oz jar and an adult serving, for 5 gm of protein, is 1 tablespoon, so it lasts a long time. I eat it on toast and crackers but it could be used for anything needing nut butter. There isn't any peanut contamination (I'm allergic) and it tastes great! The ingredients are simply pumpkin seeds and sea salt. You could make it yourself if you had a good enough food processor.

Pumpkin seeds have tons of omega oils, and if any of you have husbands with prostate problems, the sterols in them are good for that, too!

Sounds like a good alernative to peanut butter, as many schools are banning peanut butter due to allergic reactions.

This thread is such good idea! I need to try some new stuff in my life...let me think.

Yesterday, I had a cup of coffee & a veggie burger & piece of whole wheat toast for breakfast. I like to get my protein in early.

The kids had cereal, plums & cucumbers (organic)

For lunch, they had cheese w/alfalfa sprout sandwiches & I had lentils, sprouts & sour cream in a whole wheat tortilla.

For snack: kids had more fruit.

for dinner, kids had beans & rice & breakfast links
I had another yummy wrap my dh made with sundried tomato, artichoke hearts, roasted garlic salsa, sunflower seeds & red & green leaf lettuces& guacamole.

For dessert, the kids & I shared the last of the vanilla yogurt...dh had to work...

Hey, that wasn't that bad--except that WRAP was BIG and I ate it all (couldn't let the guac brown, dontchaknow...)

dinner: "jambalaya" pasta mix made with tofu (Mmm!) and salad
dessert: cookies n cream ice cream (I'm addicted and completely unable to be vegan because of it! I know, there are soy substitutes, but it just doesn't do it for me, maybe it's being the granddaughter of dairy farmers...)

today:
breakfast: oatmeal with raisins, cranberry juice
lunch: pb&j, baby carrots, yogurt w/bluberries
(I'm in a rut! usually I take leftovers to the lab for lunch, but we've been having more meals lately with no leftovers or DH takes them, so pb&J for me! or Almond butter! that's really good too, but more expensive.)
Tonight's dinner: i think we're having spaghetti w/tofu (more pasta than normal because DH has a running race tomorrow morning and wants to carboload.)

er..... : today was a BAD meal day. :LOL

breakfast was a half gallon of applesauce (split 4 ways) and some dry cereal. Orange juice to drink.

lunch was a can of olives, flatbread with peanut butter and honey. soy milk to drink.

dinner was better. homemade foccocia bread with a side of sauteed veggies. water.

fresh oatmeal/walnut/raisin cookies for dessert!

of course Mama had some Mother's Milk Tea and Chai throughout the day.:LOL

OOOOHh you are all making me miss wraps and breads!
This is making me so hungry and my cupboards are almost bare.

We had applesauce with prunes for breakfast. I had more sorghum bread with blueberry.

Lunch was lentil burger with salsa for me and dd had hummous and rice and a rice cake to teeth on.

Dinner was leftover beans and rice and broccoli and dd had pintos with rice and asked for broccoli, peas AND avocados and believe it or not she is sleeping well! I thought for sure she would have a tummyache!

My snack was koala krisps (of course) and a rice cake with hummous and more sorghum bread with blueberries. I have to go to the market! I need some variety.

I love reading what everyone eats this should help me a great deal. Good idea. Wish I could afford pumpkin seed butter.

Breakfast - organic instant oatmeal with almond milk and black tea (Dh was still sleeping and I didn't want to wake him)

Lunch - out to that same Japanese restaurant where I had: gyoza dumplings, spring rolls, miso soup, cold barley tea, and spinach with miso-sesame dressing, and DH had: cold soba noodles with dipping sauce, tempura roll, spinach.

Snack: a big lucious peach, 1/2 an avocado (not together!)

Dinner: rice pasta with a creamy sauce made from a packet of Chreeze and Follow Your Heart Gourmet Vegan cheese and a little almond milk and Earth Balance. Big mixed green salad with avocado.

Dessert: No room!

Dinner the night before was "no chicken broth" risotto with toasted pita and almonds crushed and sprinkled on top, served with tvp chunks sauteed with broth and garlic....served with asparagas

Lunch- wraps -veggie bacon and brie for DD
baba gonouj, tabouli, arugula and feta for me

Dinner- roasted red potato with rosemary and garlic, and grilled portabellos with veggies on Rudi's Organic Rosemary Artisian bread and fruit

tonight is tofu ginger stir fry

Today: breakfast was homemade blueberry whole grain pancakes (dh got inspired by watching a rerun of a Good Eats episode on pancakes last night), veggie sausage, veggie bacon, OJ, chai

Lunch - slice of leftover pizza

Snack - half an avocado

Dinner - broiled asparagus (SO much better than boiled or steamed), a cabbage/tomato/chickpea stew out of Moosewood over Kashi pilaf, and mixed baby greens salad with apple, walnuts, tomatoes, cucumber. Dessert was peach/blackberry crisp with a vegan topping but a most non-vegan homemade vanilla ice cream (another Good Eats episode inspired dh). Most of the veggies and fruits were from the farmer's market!

Boy, I wish my 2 year old would eat as healthy as we do - unfortunately the only green thing I can get him to eat these days is avocado.

I cannot remember yesterday- must not have been too good. Today has not been good either- dh is still outta town and I am alone with three- the youngest who still has whooping cough. I am exhausted and tend to go for vegan junk food-
frozen spinach/pasta stuff that is absolutely not helping me in any positive manner............

Today sucked.

I had brown rice crisp cereal with rice milk.
no lunch---UGH!
rice pasta with annies tuscany dressing and leftover black beans with muir glen salsa and broccoli.
rice cakes with hummus
tropical source chocolate. 4 squares.... DOH!
Now what to have for my 1am snack!
