In recipes, in smoothies, stuff like that. Here in Israel the concentrate is sold in a can, in syrup form.

I would think so. I have some great cake recipes where I use apple or pineapple juice concentrate instead of sugar and it tastes great.

The sugar in apple juice concentrate is fructose, which is a more complex sugar, therefore it takes a bit longer to digest. I use it often, even in my morning tea. I don't get that awful sugar rush and then crash afterwards like with regular sugar.
