When it's hot, I like to take at least some of the cooking outside. Not only does it help keep the house cooler, but dh helps a little more. Our tried and true is kefta, and this weekend, I grilled some veggies and made a nice salad--and there was sweet corn at the farmers market! What are you grilling? I'd love some new ideas--especially chicken, ground beef, tofu or veggies!

Moroccan-style kefta:
2 lbs. ground beef
1 large onion, finely diced or grated
2 cloves garlic, crushed
1 bunch each parsley and cilantro, finely chopped
1 T ground ginger
1 T ground cumin
1 T paprika
1/2 tsp black pepper
salt and cayenne to taste

Mix and lest rest in fridge an hour before grilling. Make into small round patties, grill. Mmmm.

I'm a vegetarian, & I'm in love with grilled portabellas! I marinate them and grill 'em and put 'em on a bun like a burger. Yummmmm! They are expensive, but I've found a really good deal on them at Costco.

This is my new favorite recipe. I cook it inside because we don't have an outdoor grill, but I'm sure it would work great outside too.

Cranberry Turkey Burgers

1 1/3 pounds ground turkey, breast
1 small Apple, finely chopped (McIntosh)
1 small white onion, chopped
1 rib celery, finely chopped
1 teaspoon poultry seasoning, heaping
salt and pepper, to taste
olive oil, for drizzling
4 sandwich size English muffin
1 cup cranberry sauce, whole berry
1/2 cup mayonnaise

Combine turkey, apple, onion, celery, poultry seasoning, salt, and pepper in a bowl and form into 4 large patties.

Preheat a large skillet or a grill pan to medium high heat.

Drizzle skillet or brush grill with olive oil and cook patties 5 to 6 minutes on each side. (I drizzle it on the burgers, instead of the grill)

Toast split English muffins.

Mix together cranberry sauce and mayonnaise.

Spread muffin halves with cran-mayonnaise and pile in burgers

Asparagus, broccoli, green beans...what have you

In a foil envelope drizzled with olive oil and with a little salt an pepper. Grilled marinated eggplant is yummy too although more time consuming.

Chicken Breasts:

Marinate in Paul Newman's Balsamic Vinegar and Oil dressing for at least an hour.

Fire up the grill

Put chicken breasts on. Baste with marinade while cooking.

On the side in a foil packet off of the direct heat:

Green & red pepper slices
Onion slices
Yellow squash
1 tsp of lemon juice
1 tbsp of olive oil
1 clove minced garlic
black pepper, rosemary and dill to taste

Yummy salmon:

In a foil packet place your salmon filets
In a small bowl or coffee cup mix 1 tsp lemon juice, 1 tbsp olive oil, black pepper and fresh dill & pour over fillets.
Place on grill off direct heat.

Chicken Shish Kabobs:

Skewer chicken chunks (I usually buy boneless, skinless breasts on sale and cut them into chunks) alternating with mushrooms and green pepper.

Marinate in Teriaki Sauce at least 1 hour.

Fire up the grill.

Put above veggies (or other variations of veggies like asparagus, pea pods, etc.) in foil packet but instead of the lemon and olive oil, use teriaki sauce.

Put on grill. Baste kabobs with teriaki while cooking.

Start the Jasmati rice on the stove or in microwave.

Serve veggies over the rice, shish kabobs on the side.

We do kind of the same thing as the above Kefta but a little different:

Mush together ground lamb, cumin, chopped fresh mint, several cloves pressed garlic, salt and pepper. Knead until smooth. Press onto skewers (Think like the shape of a large hot dog) and grill until browned.

I also did a grilled salad this week--yum! I have summer and zucchini squash in my garden. I cut them and an eggplant from the farmers market into strips and marinated in lime juice, olive oil, salt and chili powder. Grilled--I put the eggplant on skewers--and then chopped them. Mixed in a bowl, chilled for an hour, and then added fresh chopped tomato and a little cilantro, along with more lime and s&p to taste.
It was so good, I didn't eat the main dish.
The tomatoes are almost red, and the cukes are coming along. Another week, and we will have salad all the time.

Any good ideas for okra, btw?
