I am a teacher and will start back to work in a few weeks. I have a new childcare provider that is a little further away so I won't have time to stop at my favorite coffee shop on my way to work every morning.
I am looking for some yummy yet healthy muffin recipes so I can make a couple of batches for dd #1 (17 yo) and I to grab as we leave the house each morning. I have a good bran muffin recipe and do vary it with carrots or zuccini every now and then but would like a little more variety. I'm looking for whole grains and not a ton of sugar. Dairy is OK but they don't have to have dairy. We like soy milk just fine, too.
Ooooh, we all love muffins in our family!
A while back, I made a similar request to yours, and there were some great replies. Here's a link.
Hopefully we'll get some more recipes, too!
1 c Each cornmeal and rice flour
1/2 c Soy flour
1 t Salt
1 t Baking powder
1/2 ts Baking soda
1 t Cinnamon
1/3 c Chopped almonds
2 tb Canola oil
1 c Soy milk
1 2/3 c Ripe banana, mashed
1 t Vanilla
1 tb ENER G egg replacer
1/4 c Water
Put cornmeal, rice and soy flours, salt, baking
powder, baking soda, cinnamon and almonds in a large
bowl. Toss to combine.
In a separate bowl, combine oil, soy milk, mashed
banana and vanilla. Whisk egg replacer with water.
Stir into oil mixture.
Pour wet ingredients into dry ingredients. Stir
quickly and gently until just blended. Divide batter
equally into lightly greased muffin tins. Bake at 375
F. for 25 to 30 minutes.
