I made some burritos last night with tempeh that I marinated in buffalo sauce and garlic. I know that the sodium-intense buffalo sauce isn't exactly health food, but......

....I am SOOOOOOO proud of myself because I got Dp to eat tempeh!!!!! He is the pickiest eater on earth and very,very.very suspicious of "hippy food." When we met, he had never eaten salad before, not once in his life!!! (Now he loves it and we eat it almost every night!) The only vegatable he ever remembered having eaten before was celery and only because it came with hot wings!!!

While I revel in my little personal victory, does anyone have any creative tempeh ideas to share?

My husband makes a great sesame tempeh concoction. Very easy.

He slices the tempeh, dips it briefly in soy sauce, then dredges the pieces in sesame seeds. Then he stir fries them on a skillet with a little peanut oil. My toddler eats these like candy.

Here is my current favorite way to cook tempeh:

Veggie Fajitas

1 package tempeh, cut in half and sliced
Olive oil
Chili powder
1-2 red onions thickly sliced
Assorted veggies, here is what I use:
1 zuchini or yellow squash cut in half moons
a bunch of sugar snap peas left whole
1 red and 1 yellow pepper sliced
I sometimes add broccoli, kale, mushrooms or other veggies, or substitute for the others.
Juice of one lemon or lime
Chopped cilantro

Fixings:
whole wheat tortillas
salsa
yogurt or sour cream
grated cheddar or jack cheese

Saute the tempeh in the olive oil until it starts to brown. Add chili powder and cook until tempeh is golden brown. Remore the tempeh to a plate. Add a little more olive oil to the pan and saute the onions. Add the zuchini and cook for a few minutes. Add the peppers and peas and cook for a few more minutes. Season with salt and pepper. Add the tempeh to the skillet and season with the lemon/lime juice and chopped cilantro.

While the veggies cook warm the tortillas. To serve, place veggies and fixins on tortilla- yummy!

Tempeh reuben sandwich

Soak tempeh in salt water, slice into thin "burgers" and pan fry until crispy on the outside.

Make sandwiches on toasted, buttered rye bread with sauerkraut, soy or organic swiss cheese, natural thousand island dresssing, and the tempeh.

MMMMMMMMMM yummie

You can also use tempeh in your favorite chicken salad recipe, that turns out delicious. Just parboil the tempeh in salt water first.

those rueben sandwiches sound yummy!

I've never made chicken salad before, do you have a recipe that to share (for use with tempeh)?

Well,
It's kinda just chopped up small veggies (celery, onions, pickles, green pepper, whatever you like), mayonnaise to moisten (about 1/4 cup), salt & pepper, other spices to taste (dill works nice). Slivered almonds, walnuts, or diced apples are also a nice addition.

First boil 2 cakes of tempeh in salt water for about 10 minutes. Then chill, dice, and mix with the rest of the stuff.

Good for sandwiches or just eating!

NewMa, you sound like me w/dh--quite a triumph to get him to eat tempeh as well!

I like to grill it in slabs like a hamburger. Coat it in a little olive oil and it's delish!

I also like to sautee it in oil then cube it to be added into pastas. My favorite combination is tempeh/soy mozzarella/kalamata olives/roasted red peppers & penne w/a bit of basil.

Thanks mamas!! These are some really great ideas!!!

Etoile- I am getting really hungry thinking about a nice tempeh rueben! Awesome idea- I think I might just have to try that this weekend!!

Actually, thinking about all of these ideas is making me really hungry! Sometimes I hate my breastfeeder's appetite. Gotta go find a snack.....

I love tempeh!
I break it up and add it to chili and make tacos w/ it.
I love tempeh "reuban" sandwhiches
tempeh stirfries w/ ginger and peanut sauce
grilled tempeh w/ bbq sauce
