I'm having a few people over tomorrow night, and have been in the kitchen creating for the past two days! What a blast--especially since my 2 yo loves helping now. I got to dig out my beloved calaphon pans & cooking with them is pure nirvana. So the menu is quasi-Caribbean (very festive!) Grilled jerk chicken (there will be carnivores there,) baked plantains, homegrown cuke & pear tomato salad, coconut rice, and roasted sweet potatoes w/lime & cilantro.

And, drumroll please, for dessert- homemade peach cobbler with homemade vanilla ice cream!

I've grown most of the herbs and all of the peppers (scotch bonnet, jalapeno, etc.) myself--which is just so cool, I love my collection of peppers.

The inspiration for this meal is a homesick Australian friend of mine--I hope it makes her feel more connected here. Now I have to go do the dishes...

Your meal sounds amazing and I know that your guests will feel very loved knowing that you spent so much time.

Consequently.... can I get your recipe for baked plaintains?

OK, BRW, here it tis:

3 tbsps. honey
2 tbsps. lemon juice
2 tbsps. packed brown sugar (I left this out-not necessary if the plantains are super ripe)
1 tbsp. water
1 tbsp. melted butter or soy margarine
4 cups sliced ripe plantains (1" thick)

1. Preheat oven to 350.
2. Stir honey, lemon juice, sugar, water and butter or margarine together in a medium sized bowl. Add the plantain slices, and toss. Spoon into a greased 8" baking dish.'
3. Bake, uncovered, for 40 minutes, turning sides after 20 minutes, or until liquid is syrupy and plantains are soft and glazed.

your lucky aussie friend.... where is she/he homesick for?

I used to send gum leaves in the mail to my dear friend who moved to NY years ago - she would burn them and feel better
