I love chai tea. I have a serious addiction to Starbucks chai as well. Just a quick note to say they are a different entity here to the US. They're soley NZ owned & only use fair traded coffee ( or so they tell me ) Anyways, I would like to save money & also stop giving my money to a company who could be - well a bit iffy.

Anyone have any good recipes they would like to share? I got one really complex one but it's mega expensive ( uses a vanilla bean per few cups)

Here's one I found in my recipe collection, never tried it myself though. Hope it's as good as what you used to have!! --

3 cups water
1-inch piece of fresh ginger root, sliced
1/4 tsp black peppercorns
1/2 tsp fennel seeds
1/4 tsp cardamon seeds
6 to 8 whole cloves
2 heaping teaspoons black tea leaves, or 2 tea bags
3/4 cup milk
sugar or mild honey to taste

In a medium saucepan, boil the water & spices until the lidquid has reduced to 2 cups, 10-15 minutes. Remove from heat, add the black tea or tea bags, and steep for 4-5 minutes. Strain the tea, discard the leaves & spices, and return the tea to the saucepan. Add the milk and heat to boiling. Add sugar or honey to taste & serve.
