Does anyone have a recipe for cake/pie/cheesecake with LOTS of strawberries??? DD's birthday is coming up, and she loves 'em!

She'll be 3. We're okay with some sugar and with dairy, but I'd like it just a touch healthier than the recipes my mom came up with

This is a pretty easy recipe. Slice two bananas and lay on the bottom of a pie crust (or you could use blueberries) Mix 8 oz of cream cheese, 1 cup of whipped topping and 1/2 - 1 cup of powdered sugar (depending on your taste). Mix until creamy and spread over the bananas or berries. Just spoon it out in lumps and spread. (we usually double this layer b/c it's so yummie!

Then slice your strawberries and pile on top. You can garnish with more berries and whipped topping if you like.

We've also put a layer of that strawberry puree/gel stuff you find in the produce section before adding the fresh strawberries. It makes it a little gooier and is pretty good.

OR . . . My birthday cake is always strawberry shortcake with angle food cake.

Buy a large bunt angel food cake from the bakery and slice horizontally in half.

Defrost two containers of strawberries (with juice). Spoon defrosted berries and juice over the bottom layer of the cake. Top with fresh sliced berries and cool whip and add the other layer of cake. Repeat layers (strawberries with juice and fresh berries). Take any of the leftover frozen juice/berries and pour in the middle of the cake. Frost the cake with coolwhip and garnish with fresh berries. THE CAKE SHOULD SIT OVERNIGHT IN THE FRIDGE FOR ALL THE LAYERS TO MELD DELICIOUSLY TOGETHER!!! It's sooo good and makes a very pretty cake.
