I just threw out a double batch of zucchini muffins. This happens to me all the time--almost everything I bake, from cakes to breads to cookies, all come out terrible. They don't rise, are over- or under-done, tough, too hard, blah, blah, blah. These particular muffins that I ruined tonight didn't rise and were rubbery. I'm guessing that the problem was (in part) that it was a recipe for bread and not muffins and that I should've accounted for that in some way, but who knows. If any of you experts have any words of wisdom for a baker who tries really hard but fails spectacularly almost every time, I'd love to hear them.

I'm not an expert, but maybe you are overmixing. When baking muffin you need to be careful not to overmix! Sorry I can't be of more help lol!
