Thought I would share this quick and easy recipe. My husband HATES carrots as does my 23 month old ds. They both ate second helpings of this easy soup:
[CENTER]WINTER CARROT SOUP
5 carrots, washed w/ peeling in tact and shredded
1 med onion. Roughly chopped
4 cups of veg stock ( I used vegan bouillon w/ seasalt)
1 6oz can tomato paste
1 tbs soy sauce
1/2 tsp dried thyme
1/4 tsp cumin
1/4 tsp pepper.
**heat olive oil in dutch oven over med/high. Add carrots and onions and saute until soft (6 minutes)
**Combine tomato paste w/ stock and whisk unti smooth. Add to pot w/ remaining ingrediants. Cover and increast the heat to high. When it begins to boil, reduce to low and cook for 15 minutes part'l covered.
**blend soup w/ immersion stick blender or in batches in regular blender.
**I served it w/ a swirl of organic heavy cream on top and with crusty bread on the side!
